Pastry Sous Chef

Le Bilboquet is searching for a creative and motivated Sous Chef to expand their culinary skills and grow with us. The Pastry Sous will partner with the Executive Chef and Sous Chef to direct and coordinate activities of the culinary department, lead the culinary team, maintain established operational standards. 

Qualifications:

• At least 3+ years of Food and Beverage (F&B) industry and culinary experience in a similar role
• Strong knowledge of cooking methods, kitchen equipment, and best practices
• An effective communicator with a positive attitude and a team player mentality
• Commitment to quality, accuracy, timeliness, and results
• Advanced troubleshooting, problem-solving, prioritizing, and multi-tasking skills
• Excellent knowledge of BOH systems, ordering, and inventory
• Knowledge of Toast 

Responsibilities:

• Run the pass during peak service, controlling ticket flow, timing, and communication between stations.
• Satisfy guest needs and exceed expectations by delivering innovative, high-quality pastry offerings.
• Continually reference the F&B events calendar for the preparation of future events.
• Develops, tests, and implements new products and ensures quality control of all bakery items.
• Develop, monitor and achieve company, department and divisional goals and objectives; effectively communicate operational updates through daily line ups and divisional meetings.
• Supervises, trains, schedules, and evaluates kitchen staff to ensure high standards of food quality, service, and safety.
• Assists with menu planning, recipe development, seasonal offerings, banquet menus, and special events.
• Maintains compliance with all local, state, and federal food safety and sanitation regulations.
• Assists with purchasing, receiving, inventory management, and vendor coordination.
• Promotes a positive work environment through effective communication, coaching, and team development.
• Responds to guest concerns and works collaboratively with front-of-house staff to ensure guest satisfaction.
• Establish and maintain standard pastry recipes and procedures; ensure accurate documentation.
