Position Summary:
The Production Supervisor will oversee daily operations of a high-speed, fully automated bread manufacturing facility. This role requires a hands-on leader with a minimum of 5 years of direct supervisory experience in high-speed commercial bread production . The ideal candidate has proven experience managing automated mixing, dividing, proofing, baking (tunnel ovens), and packaging systems in a continuous production environment. This individual must be able to immediately step in and lead production with minimal training.

Key Responsibilities

Production Operations

• Direct and supervise all activities on the bread production floor to ensure maximum throughput, efficiency, and product consistency.

• Oversee automated production lines including mixers, dividers, proofers, tunnel ovens, and packaging systems.

• Ensure daily production targets, yield standards, and downtime metrics are consistently met.

• Make real-time operational adjustments to address dough performance, fermentation variables, or equipment disruptions.

Team Leadership

• Supervise, coach, and hold accountable production floor personnel in a fast-paced, high-volume bread environment.

• Manage shift scheduling, labor allocation, and performance management.

• Develop line leads and operators to maintain production continuity and standards.

Quality & Food Safety

• Enforce strict adherence to HACCP, FDA, and OSHA standards.

• Monitor dough quality, proofing performance, bake profiles, and finished product consistency.

• Partner closely with QA to resolve quality deviations quickly and effectively.

Equipment Oversight

• Monitor performance of high-speed automated bakery systems.

• Coordinate with maintenance to minimize downtime and maintain line efficiency.

• Identify recurring mechanical or process issues and recommend improvements.

Reporting & Metrics

• Track and report key production metrics including throughput, scrap, downtime, labor efficiency, and quality deviations.

• Communicate operational performance and challenges to the Production Manager.

Required Qualifications

• Minimum 5+ years supervisory experience in high-speed commercial bread manufacturing .

• Demonstrated experience managing automated bakery equipment and continuous production lines.

• Strong understanding of dough systems, fermentation control, and baking parameters.

• Proven ability to lead teams in a fast-paced, high-temperature production environment.

• Working knowledge of HACCP, OSHA, and FDA regulations.

• Strong leadership, organizational, and decision-making skills.

Work Environment

• Primarily on the production floor in a high-speed bakery setting.

• Exposure to heat, flour dust, noise, and extended standing.
