Date: Jun 18, 2026 Location: SAN ANTONIO, TX Functional Title: Inspector V Job Title: Inspector V Agency: Dept of State Health Services Department: Meat Safety Assurance Section Salary Range: $4,263.16 - $6,779.25 monthly Shift: Day Travel: Up to 50% Full Time: Yes Non‑exempt: Yes Essential Job Functions (50%) Evaluate livestock slaughter and/or meat/poultry processing establishments to determine continuous compliance with all applicable State and Federal laws, rules, and regulations. Perform ante‑mortem and post‑mortem procedures; monitor processing activities; conduct sanitation inspections; verify implementation of SPS, SSOP, HACCP systems; identify regulatory noncompliance, document on Noncompliance Record, and assess corrective actions. (15%) Receive inspection schedules, report results using a computer and electronic mail, record findings, prepare technical reports outlining violations, and coordinate work schedules for coverage among assigned establishments. (10%) Monitor microbiological sampling systems, collect tissue samples for State and National sampling programs, and submit them to designated laboratories in a timely manner. (10%) Evaluate formulas and methods used in preparing meat/poultry products for potential disease transmission, make labeling compliance recommendations, and stay informed of changes in labeling and product formulation. (10%) Research regulatory documents regarding identification and disposition of noncompliances, serve as liaison between the MSA Circuit Manager and establishment management, and provide responses to management’s inspection‑related questions. (5%) Other duties: recognize zoonotic diseases, participate in investigations, serve as relief inspector, promote public education on sanitary practices, and support disaster response or COOP activation as required. Maintain a valid Class C or higher Texas driver’s license and an acceptable driving record. Knowledge, Skills and Abilities Thorough knowledge of all phases of livestock slaughter and meat/poultry processing operations. Knowledge of SPS, SSOP, HACCP principles, humane slaughter, pathogen reduction, and other mandated quality control programs. Knowledge of inspection protocols specific to HACCP establishments. Knowledge of State and Federal laws, rules, regulations, directives, and notices. Knowledge of veterinary medicine practices, zoonotic disease control, and food animal anatomy. Working knowledge of insect and rodent control regulations. Basic evidence rules. Skill in conducting inspections, determining courses of action, using necessary instruments, and collecting samples. Skill in basic mathematics. Ability to prepare reports, analyze data, interpret laws, train others, and use computer word processing, spreadsheets, and email. Ability to rationalize, exercise sound judgment, communicate clearly, and establish working relationships. Ability to recognize normal versus abnormal inspections and pass a standardized color vision test. Ability to use a computer for word processing, spreadsheets, and email. Required Qualifications Graduation from a standard senior high school or equivalent. Valid Class C (or higher) Texas driver’s license or equivalent from another state. Ability to pass a color vision test. Preferred Qualifications Course credit from an accredited two‑ or four‑year college or university, especially in animal/food science, livestock slaughter, or meat/poultry processing. Graduation from an accredited college or university with relevant major coursework. Training from USDA‑FSIS in SPS, SSOP, HACCP, humane slaughter, or food microbiological sampling. Experience in a public health or animal health related field. Experience with all phases of livestock slaughter and meat/poultry processing operations. Experience with state and federal regulations relevant to slaughter and processing. Experience in a regulatory field requiring direct public contact. Experience in regulatory/quality control positions within a regulated food industry. Experience as an inspector in a state or federal food inspection program. Experience writing reports and presenting information. Proficiency in computers (word processing, spreadsheets, email). Experience in positions requiring direct public contact.
