The cook is responsible for appropriate use of facility supplies and equipment to minimize loss. Duties and Responsibilities * Prepares and/or directs preparation of food served using established production procedures and systems as assigned by the Food Service Director.* Determines & ensures availability of supplies & food or approved substitutions in adequate time for preparation. Correctly prepares all food served following standard recipes and special diet orders.* Maintain HACCP logs and daily production records* Follow safety regulations and precautions at all times, cleans and maintains equipment used in food preparation, observes proper food preparation and handling techniques.* Follow Federal and State long term care regulations and Dietary Department policies and procedures.## Qualifications* Knowledge of food handling, preparation and service.* Knowledge of local and state health and sanitation and safety codes is beneficial.* Basic understanding of kitchen cookware and appliances.* Previous cooking experience recommended.* ServSafe certified; and ServSafe Allergens certification recommended.
