KABOB LINE/PREP COOK — NOW HIRING

Nationally Recognized Glendale Restaurant (LA Times Top 101 • NYT Top 50 • Michelin Guide) Pay: $16.50/hr base + Guaranteed Total $22–24/hr (DOE & Performance) We are a high-volume, critically acclaimed kabob shop in Glendale, operating in a tiny 299 sq ft kitchen that is extremely hot, fast, and high-pressure We move with precision. No ego, no chaos -- just execution. We are hiring serious, disciplined Line/Prep Cooks who want long-term stability and can thrive in an intense environment.

POSITION: KABOB LINE/PREP COOK

(3 positions available) Pay Structure

• Base wage: $16.50/hr
• Guaranteed total pay: $22–24/hr depending on tier

Schedule

• Thursday–Sunday only (we are closed Mon–Wed)
• Start: 9:30am • Close: ~6:00pm
• These are our highest-volume service days and require consistent, focused

execution

WHAT WE’RE LOOKING FOR

• Fast, clean, precise cooks
• Minimum 3-5 years line experience (kabob/grill experience a plus)
• Ability to handle intense heat and a tight kitchen
• Works independently without constant direction
• Low ego, high discipline
• Keeps station spotless, organized, and prepped
• Able to manage heavy flow and maintain calm under pressure
• Someone who reduces pressure on the chef (chef oversees; you execute)

RESPONSIBILITIES

• Execute kabob/grill line with speed and accuracy
• Prep proteins, vegetables, sauces, and marinades
• Maintain perfect station cleanliness
• Time dishes with precision and handle volume without crashing
• Support the team through prep and cleaning tasks
• Move efficiently in a tight, high-heat environment

OUR FAMILY, OUR STORY

They took over Mini Kabob in 1987, initially founded by a Persian Armenian named Ara. The Martirosyans brought their authentic Armenian recipes with Egyptian influences from their great-grandparents' heritage. In 2015, their son Armen Martirosyan joined Mini Kabob, diligently refining recipes and earning recognition from local media and TV outlets, propelling the restaurant to international acclaim. Notably featured in the Los Angeles Times' 101 Best Restaurants and the New York Times' Top 50 nationwide, Mini Kabob has become a global destination. Now, with the addition of Armen's wife, Katya Martirosyan, to the team, Mini Kabob is poised for expansion, offering catering services and preparing for a prosperous future while maintaining its unique, homey kitchen atmosphere. Every day, the Martirosyans craft their recipes from scratch, infusing each plate with a palpable love and creating a dining experience akin to visiting their family kitchen.
