Assist a higher‑rank cook with manufacturing, assembling, and packaging of food; instruct and direct subordinate personnel in the Central Food Processing Plant. Estimate food needs in advance and requisition necessary supplies to comply with menu requirements. Supervise receipt, storage, care, and distribution of food supplies. Prepare meals adhering to approved standardized recipes and a predetermined schedule. Inspect kitchens, cafeterias, refrigerators, storage rooms, and equipment for cleanliness and pest control. Consult with a superior on development and maintenance of an adequate dietary program. Act as a supervisory assistant to a higher‑rank cook in a large kitchen and prepare and cook foods as directed. Perform related work as required. Required Qualifications Knowledge, skills, and capacities: Thorough knowledge of food and beverage preparation and kitchen management. Skill in various branches of cookery, including meats, fish, vegetables, soups, salads, beverages, and desserts in large quantities. Ability to plan, lay out, and supervise the work of others preparing and cooking food daily for 100–500 persons. Ability to assist or operate a food production department in the Central Food Processing Plant. Education and Experience: Completion of eight school grades; or Employment as a cook in a hospital, hotel, or large restaurant, with experience in preparing foods in large quantities. OR, a combination of education and experience substantially equivalent to the above. Physical requirement: Must be physically qualified to perform assigned duties, as evidenced by a physician’s certificate.
