About Us

Old World Pizzeria is a New York style pizzeria opening this summer in the heart of downtown Birmingham. We serve 20-inch pies and hot slices from a fast, walk-in counter. No phones, no online orders, no gimmicks. Just great pizza, made right, in a room full of energy. We already run a successful location in Saginaw, and Birmingham is our next chapter. This is a ground-floor opportunity to help open a brand-new store and build the team and the systems that will define it.

The Role

We're looking for an Operations Manager to run the day-to-day of our Birmingham location. This is a hands-on leadership role, not a desk job. You'll open and close the store, hold the keys, run shifts, lead the crew, and own the standards that keep the line moving and the customers coming back. You'll work closely with our executive chef and ownership to get this store open strong and keep it running clean, fast, and profitable. What You'll Own

• Full daily operations: opening, closing, key holding, and running shifts from the front
• Leading, scheduling, and developing the crew across all stations
• Hitting labor, food cost, and sales targets, and understanding the numbers behind them
• Holding the line on food safety, cleanliness, and health department standards
• Cash handling, drawer counts, and end-of-night reconciliation
• Ordering, inventory, and vendor relationships alongside the chef and back office
• Setting the pace and the tone on the floor, especially during the rush
• Being the trusted person in the room, including nights and weekends

What We're Looking For

• 2+ years managing or leading in a restaurant, QSR, fast-casual, or high-volume kitchen environment
• Someone who leads from the floor and isn't afraid to jump on a station when it's slammed
• Real command of the operational basics: labor, food cost, scheduling, inventory, cash
• Comfortable holding keys and running the store solo, including opening and closing
• Strong people leader who can hire, train, and hold a crew to a standard
• Cool under a rush and organized when it counts
• Available nights and weekends, including late-night weekend service
• ServSafe certified, or willing to certify before opening
• Pizza or NY-style experience is a plus, not a requirement
