About UsMatilda's is a new neighborhood bakery in Santa Monica. We’re building a place where people come for fresh bread in the morning and stay for a pastry and a coffee. We bake everything from scratch, use quality ingredients, and care about doing things right. As part of our founding team, you’ll help shape our menu, our kitchen culture, and what we become.
The RoleWe’re looking for a skilled, dependable baker who loves the craft and is excited to help launch something new. You’ll prepare our daily lineup of breads, pastries, and baked goods, keep the kitchen running smoothly during early-morning production, and help us develop and refine recipes as we grow.
What You’ll Do- Prepare, mix, shape, proof, and bake breads, pastries, cookies, cakes, and other goods according to recipes and daily production schedules
- Keep consistent quality, taste, and presentation across every batch
- Manage doughs and ferments, including timing, temperature, and proofing
- Help develop new recipes and seasonal specials, and contribute ideas to the menu
- Track inventory, flag low stock, and help receive and put away deliveries
- Follow food safety, sanitation, and allergen procedures, and keep your station and equipment clean
- Work with front-of-house staff to keep display cases full throughout the day
- Help set up kitchen systems and routines during our opening phase
- [1–2+] years of experience in a professional bakery, pastry kitchen, or similar setting
- Solid knowledge of baking fundamentals, including laminated doughs, yeasted breads, and pastry techniques
- Ability to follow recipes precisely while also bringing creativity and good judgment
- Strong time management and the ability to juggle multiple bakes at once
- Comfort with early-morning shifts (starting around [4:00/5:00 AM]), weekends, and holidays
- Ability to stand for long periods and lift up to 50 lbs
- Food handler certification, or willingness to obtain one before starting
Nice to have: sourdough or naturally leavened bread experience, cake decorating skills, or experience opening a new food business.
