Alessandro’s Enoteca, the elevated Italian concept from Alessandro’s Ventures, is seeking experienced, hardworking Prep Cooks to join our culinary team.

Great food starts long before service begins. Our Prep Cooks are responsible for creating the foundation that allows the kitchen to execute at a high level every night.

We’re looking for people who take pride in their work, respect ingredients, stay organized, and understand that consistency and attention to detail matter in everything they do.

The right candidate is dependable, organized, efficient, clean, and eager to learn. You should be comfortable working independently while understanding that everything you prepare directly impacts the rest of the kitchen team and ultimately the guest experience.

Our Prep Cooks are expected to:

• Complete daily prep lists accurately and efficiently

• Follow recipes, specifications, portioning, and presentation standards consistently

• Prepare vegetables, proteins, sauces, stocks, dressings, garnishes, and other ingredients as assigned

• Execute knife work and fundamental cooking techniques safely and consistently

• Properly weigh, measure, portion, label, date, rotate, and store products

• Maintain consistency in taste, quality, yield, and preparation

• Communicate proactively with Chefs regarding prep levels, shortages, quality issues, and product needs

• Maintain organized and properly stocked prep areas, walk-ins, and storage spaces

• Follow FIFO and proper product-rotation procedures

• Minimize waste and treat ingredients with care

• Maintain excellent sanitation and food-safety standards

• Keep workstations clean and organized throughout the shift, not simply at the end of the day

• Properly clean and maintain knives, cutting boards, equipment, and tools

• Assist with receiving, organizing, and properly storing deliveries when needed

• Support Line Cooks and the broader culinary team as business demands

• Follow direction from the Chef and kitchen leadership team

• Arrive on time, prepared, and ready to work

• Maintain a positive attitude and contribute to a professional, team-oriented kitchen

At Alessandro’s Enoteca, prep is not simply about getting through a list.

Every sauce should taste the way it is supposed to taste. Every cut should be consistent. Every product should be properly stored. Every station should be clean. Every recipe should be followed.

We expect our Prep Cooks to understand that consistency is part of the craft.

If something does not look right, taste right, or meet our standards, we expect you to speak up and fix it.

A clean and organized kitchen is non-negotiable.

Prep Cooks are expected to maintain high standards for personal hygiene, workstation cleanliness, food storage, labeling, sanitation, and overall kitchen organization.

Clean as you go. Put things back where they belong. Leave your station better than you found it.

Great kitchens depend on people who understand that individual performance affects the entire team.

We are looking for cooks who communicate, help one another, take direction well, and are willing to step in when something needs to get done.

No task is beneath anyone.

Previous professional kitchen experience is preferred, particularly in an Italian, upscale, or high-volume restaurant environment.

Candidates should have:

• Basic professional knife skills

• Understanding of fundamental cooking and preparation techniques

• Knowledge of proper food handling, sanitation, and storage procedures

• Ability to follow recipes and specifications accurately

• Ability to work efficiently while maintaining quality

• Strong organizational skills and attention to detail

• Ability to safely lift, carry, bend, and stand for extended periods

• Reliable attendance and punctuality

• Availability based on the needs of the restaurant, including weekends and holidays
