Position Summary
The Meat Manager is responsible for leading the daily operations of the meat department while ensuring high standards for product quality, freshness, customer service, food safety, sanitation, merchandising, and profitability. This position leads and develops department associates, manages production and inventory, controls shrink, and ensures the department remains clean, organized, fully stocked, and customer-ready.
Key Responsibilities

• Oversee all daily meat department operations and establish department priorities.
• Plan and coordinate cutting, preparation, wrapping, stocking, and merchandising activities based on sales and customer demand.
• Monitor product freshness, quality, appearance, temperature, and availability throughout the day.
• Ensure meat cases, displays, counters, coolers, freezers, and preparation areas are clean, organized, attractive, and properly stocked.
• Provide friendly, knowledgeable, and professional customer service.
• Assist customers with product selections, special requests, preparation questions, and other meat department needs.
• Cut, trim, prepare, weigh, wrap, price, and label meat products as trained and authorized.
• Schedule and assign associates based on workload, production requirements, customer traffic, and business needs.
• Manage department inventory and maintain appropriate product and supply levels.
• Order meat products, packaging, supplies, and other department materials based on anticipated sales and inventory needs.
• Oversee receiving, storage, rotation, and proper handling of department products.
• Ensure proper product rotation, dating, labeling, storage, and temperature-control procedures are followed.
• Control shrink and product loss through effective ordering, production planning, handling, rotation, and inventory management.
• Ensure products are accurately priced, labeled, signed, and displayed.
• Maintain required production, inventory, temperature, sanitation, and department records.
• Plan and execute promotional displays, seasonal merchandising, and advertised items.
• Ensure cutting, preparation, wrapping, storage, and sales areas are maintained according to sanitation standards.
• Oversee department opening and closing procedures.
• Monitor equipment condition and report maintenance or repair needs promptly.
• Follow and reinforce company policies related to food safety, sanitation, workplace safety, security, and loss prevention.
• Communicate department performance, staffing needs, inventory concerns, and operational issues to store leadership.
• Perform additional responsibilities as assigned based on business needs.

Leadership Responsibilities

• Lead, train, coach, and develop meat department associates.
• Establish clear daily expectations and assign responsibilities based on department priorities.
• Provide ongoing feedback regarding productivity, customer service, product quality, sanitation, merchandising, and performance.
• Ensure new associates receive appropriate training on department procedures, equipment, food safety, and customer service.
• Monitor associate performance and address opportunities for improvement.
• Promote teamwork, accountability, professionalism, and a customer-focused work environment.
• Lead by example by demonstrating strong customer service, urgency, accuracy, and attention to detail.
• Ensure associates understand and follow department standards and operating procedures.
• Coordinate breaks, workload, and department coverage to maintain effective operations.
• Communicate important department information and priorities to associates.
• Work collaboratively with store leadership and other department managers to support overall store operations.

Production & Merchandising Responsibilities

• Develop daily production priorities based on inventory, sales trends, promotions, and anticipated customer demand.
• Ensure sufficient product is prepared and available while minimizing overproduction.
• Maintain consistent standards for cutting, trimming, portioning, packaging, labeling, and presentation.
• Monitor meat cases and displays throughout the day and ensure products are replenished promptly.
• Maintain attractive, full, organized, and customer-ready displays.
• Ensure advertised, promotional, and seasonal products are properly prepared, stocked, signed, and displayed.
• Maintain accurate prices, shelf tags, signs, and product identification.
• Monitor product movement to identify opportunities to improve assortment, availability, and merchandising.
• Maintain organized coolers, freezers, storage areas, and back-stock.

Inventory & Shrink Control

• Maintain appropriate inventory levels based on sales, promotions, seasonal demand, and product movement.
• Place accurate and timely product and supply orders.
• Monitor inventory for low-stock, out-of-stock, overstock, or excessive back-stock conditions.
• Ensure incoming products are properly received, inspected, stored, and rotated.
• Monitor production quantities and adjust as necessary to minimize unnecessary waste.
• Identify damaged, expired, or unsellable products and ensure they are handled according to established procedures.
• Maintain proper product rotation to protect freshness and reduce shrink.
• Conduct or oversee inventory counts and other product-control activities.
• Research inventory discrepancies and communicate significant concerns to store leadership.
• Manage department resources effectively to support sales and profitability.

Food Safety & Sanitation

• Ensure established food-handling, sanitation, and temperature-control procedures are consistently followed.
• Monitor refrigeration, cooler, and freezer temperatures and respond promptly to concerns.
• Ensure cutting surfaces, utensils, equipment, wrapping stations, cases, storage areas, and workspaces are properly cleaned and sanitized.
• Enforce proper product rotation, dating, labeling, storage, and disposal procedures.
• Ensure procedures designed to prevent cross-contamination are followed.
• Maintain and reinforce appropriate personal hygiene and safe food-handling practices.
• Verify required cleaning and sanitation activities are completed accurately and on schedule.
• Immediately address food safety, sanitation, temperature, or equipment concerns.

Customer Service Responsibilities

• Create a friendly, knowledgeable, and customer-focused environment within the department.
• Assist customers with selecting products and fulfilling special requests.
• Respond professionally to customer questions, concerns, and product requests.
• Ensure associates acknowledge customers and provide prompt assistance.
• Maintain department conditions that provide customers with a clean, organized, and appealing shopping experience.
• Use product knowledge to help customers make informed purchasing decisions.

Qualifications

• Strong leadership, customer service, and interpersonal skills.
• Effective communication, coaching, organization, and problem-solving abilities.
• Strong knowledge of meat department operations, product handling, production, and merchandising.
• Ability to plan and prioritize department responsibilities in a fast-paced retail environment.
• Strong attention to product quality, freshness, sanitation, accuracy, and presentation.
• Ability to manage inventory, production, ordering, and shrink-control activities.
• Ability to provide clear direction and effectively lead a team.
• Ability to safely operate approved meat department equipment after appropriate training.
• Ability to follow and enforce established food safety and sanitation requirements.
• Dependable attendance and punctuality.
• Previous meat department, meat cutting, grocery retail, food production, or supervisory experience is preferred.

Physical Requirements

• Ability to stand and walk for extended periods.
• Ability to bend, stoop, kneel, reach, lift, carry, push, pull, and perform repetitive movements throughout the shift.
• Ability to safely lift and move meat products, cases, boxes, trays, supplies, and department inventory as required.
• Ability to perform repetitive cutting, preparation, wrapping, weighing, stocking, and cleaning activities.
• Ability to work in refrigerated areas, coolers, freezers, and varying temperatures.
• Ability to safely operate approved meat department equipment after proper training.

Work Environment
The Meat Manager works throughout the meat department, including cutting and preparation areas, refrigerated display cases, coolers, freezers, storage areas, and the sales floor. The position requires balancing hands-on meat department responsibilities with leadership, customer service, production planning, inventory management, merchandising, shrink control, food safety, sanitation, and overall department performance.
