Lead Line Cook – Watercolour Grillhouse Location: Clearwater Beach Marriott Suites on Sand Key, Florida We are seeking an experienced Lead Line Cook for our fine dining restaurant, Watercolour Grillhouse, which is consistently rated among the best fine dining experiences on the beach. This position is open to J1 Visa candidates looking for placement. Responsibilities Work with the Sous Chef to oversee the PM line for the restaurant. Prepare all hot food items according to standard recipes and/or guest specifications to ensure product consistency. Visually inspect, select, and use only food items suitable for sautéing in the preparation of all menu items. Ensure the daily production chart is properly filled out to standards. Check and control the proper storage of product (stocks and sauces needing special attention) and portion control size. Maintain cleanliness of refrigeration, storage, and working areas in compliance with Health Department regulations. Read and perform USE Record Specifications. Ensure all equipment in working areas is clean and in proper working condition. Prepare requisition for supplies and food items for production in the workstation. Use math skills to prepare items according to recipes, requiring stamina for standing and strength for lifting and moving products. Work all stations in the kitchen as needed. Attend monthly departmental meetings. Ensure a safe and healthy environment for team members and guests following all hotel policies and procedures. Qualifications Experienced line cook with leadership skills. Strong culinary knowledge and ability to prepare fine dining menu items. Proficiency in inventory management, portion control, and food safety standards. Ability to work all kitchen stations. Strong math and organizational skills. Stamina for long periods of standing and physical strength to lift and move products. For J1 Visa candidates: willingness to participate in placement. Compensation Salary: $20.00 - $22.00 per hour. Actual compensation packages may vary based on factors such as skill set, years of experience, certifications, and location. This may differ in other locations due to cost of labor considerations.
