THE ROLE The Executive Chef is responsible for directing and administering the planning, preparation, production and control of all culinary operations. The Executive Chef is expected to actively collaborate with culinary leaders across multiple locations to drive menu development, share best practices, and ensure brand consistency. In addition to strategic collaboration, this position will provide hands‑on operational support to other units, assisting with openings, special events, staffing challenges, and overall culinary execution when required. The Executive Chef will report to the General Manager. ESSENTIAL DUTIES AND RESPONSIBILITIES Manage and oversee all production, operation, and sanitation aspects of all culinary and stewarding operations throughout the property. Oversee all culinary employees to achieve budgetary, food quality, and customer service expectations. Create and develop recipes, dishes, and other culinary offerings as required by the property. Manage hiring, scheduling, training, mentoring, and, if required, disciplinary actions for all employees. Use available resources—time, labor, and materials—to maximize productivity and adjust methodologies accordingly. Assist in ensuring schedules are complete based on forecasts. Conduct regular quality assurance and control inspections to maintain cleanliness of all back‑of‑the‑house areas and keep equipment in proper working order. Maintain food, labor, and other expenses at budgeted levels. Communicate and work closely with the General Manager and Regional Executive Chef. Maintain a consistent high level of food quality, kitchen productivity, and supply chain operations. Ensure team members clean their areas as they perform their duties and assist with cleaning in other areas. Cross‑train departmental staff while encouraging, reinforcing, and supporting peers and the team. Demonstrate competent product knowledge by correctly storing and handling all perishables to maintain quality, security, value, and integrity. Provide regular travel support to other business units within the organization as needed. SUPERVISORY RESPONSIBILITIES Carries out supervisory responsibilities in accordance with all Legends Global policies and applicable laws. QUALIFICATIONS To perform this job successfully, an individual must be able to perform each essential duty with energy and enthusiasm. EDUCATION AND/OR EXPERIENCE Minimum seven (7) years of experience as an Executive Chef in a high‑volume food industry. Bachelor’s degree in hotel/restaurant management or related field preferred. SKILLS AND ABILITIES Thorough knowledge of hot, cold food, and pastry preparation. Extensive skill in using slicers, mixers, grinders, food processors, etc. Basic mathematical skills necessary to understand recipes, measurements, requisition amounts, and portion sizes. Ability to read, write, and understand the English language for requisitions, recipes, and communication with associates and leaders. Manual dexterity of hand to use all kitchen equipment, including knives, spoons, spatulas, tongs, slicers, etc. Ability to perform duties in confined spaces. Ability to perform duties within extreme temperature ranges.
