Our central commissary in San Jose supports our multiple store locations, large-scale corporate catering, and special events across the region.

We are looking for an experienced, high-energy Catering & Commissary Cook to join our production team at our 13th Street facility!

Key Responsibilities

• High-Volume Meal Prep & Batch Cooking: Prepare, season, portion, and cook large batches of signature dishes (Jerk chicken, BBQ ribs, oxtail, curry goat, salmon, plantains, rice & beans, and house sauces) following strict recipe standards and daily production par lists.
• Catering & Commissary Fulfillment: Package and organize large catering orders, event pans, and store deliveries accurately and on schedule.
• Batch Consistency & Quality Control: Maintain presentation, flavor profile, portioning, and temperature standards ("serve hot food hot, cold food cold").
• Inventory & Food Safety: Maintain strict FIFO (First-In, First-Out) inventory rotation, complete daily line temperature logs, and adhere to proper sanitation and safety guidelines.
• Equipment & Station Maintenance: Safely operate and maintain commercial kitchen equipment (grills, smokers, ovens, deep fryers, batch kettles). Keep food stations clean, sanitized, and organized.
• Teamwork: Coordinate prep schedules and production timelines with the Kitchen Manager, Lead Cooks, and Catering team.

Qualifications & Requirements

• Experience: Minimum 2+ years of experience in a high-volume prep kitchen, central commissary, catering operation, or busy restaurant environment.
• Culinary Skills: Strong knife skills, batch cooking experience, grilling, smoking, and familiarity with Caribbean flavors and ingredients.
• Food Safety: Valid California Food Handler Card required upon hire. Strong knowledge of food safety, proper holding temperatures, and sanitation protocols.
• Physical Demands: Ability to stand for extended periods, work in a warm kitchen environment, and lift up to 50 lbs comfortably.
• Attributes: Reliable, punctual, detail-oriented, and capable of working efficiently in a fast-paced team environment.
