8234 Highway 100, Nashville, Tennessee 37221 Cook Responsibilities Prepares meals according to approved menus and recipes, taking into account the special dietary needs of residents. Supervises dietary staff in the absence of the Dining Services Director to ensure efficient kitchen operation. Maintains a clean and orderly work area, including floors, and participates in weekly cleaning routines. Reports faulty equipment, broken or chipped tableware, and food trays to supervisor, removing these items from meal service. Reports incorrect refrigerator and freezer temperatures to supervisor immediately, ensuring records are updated two times per day. Ensures all leftover food is properly cooled, stored, identified, and dated. Observes good safety practices and monitors portion sizes to minimize food waste. Removes frozen food items from the freezer for next‑day preparation and begins preparation for the next meal. Makes menu substitutions when items are unavailable, only with approval of the Dining Services Director. Ensures kitchen area is clean and ready for the next day during evening shifts. Take and record food temperatures three times daily. Attends required in‑service and staff meetings. Familiarizes with specific dietary requests of each resident, monitoring changes in needs, likes, and dislikes. Maintains courtesy and politeness toward residents, visitors, and staff, following confidentiality policies regarding resident information. Assists in training new dietary employees and conducts in‑services at the direction of the Dining Services Director. Qualifications Experience in dining services. Serv‑Safe certification or willingness to complete certification within 60 days of hire. Basic understanding of food service operations and familiarity with other dietary position duties. Ability to read, write, and perform simple calculations. Fast learner, able to understand and apply principles learned. Ability to follow oral and written directions. Experience in food preparation, cooking, and estimating food quantities. Knowledgeable of sanitation and safety principles in handling food and equipment. Physical stamina: able to stand for long periods, withstand temperature extremes, wet or humid conditions, and noise. Ability to lift 50 lbs regularly or at least eight times per shift; able to carry heavy objects for 20 feet and to pull, push, grasp, and reach adequately. Organized, team‑oriented, and capable of working with others. Wears designated uniform, including slip‑resistant footwear, and maintains good personal hygiene. Willingness to work a flexible schedule that includes evenings, weekends, and holidays.
