Director of Food and Beverage

Located in the heart of Midtown Manhattan, Sanctuary Hotel New York is an award-winning luxury boutique hotel offering a collection of distinctive dining experiences, including Haven Rooftop, Sushi Lab, and Chemistry Room

We are seeking an experienced and dynamic Director of Food & Beverage to provide strategic and hands-on leadership across our food and beverage operations. The ideal candidate combines strong financial and operational expertise with a passion for exceptional service, innovative dining, and team development.

What You Will Be Doing

• Provide leadership and operational direction across the hotel’s food and beverage venues.
• Oversee restaurant and bar operations, breakfast service, in-room dining, and food and beverage support for private events.
• Maintain a visible presence during peak service periods and ensure that each venue delivers a consistently exceptional guest experience.
• Develop and implement service standards, operating procedures, and training programs.
• Recruit, train, coach, and develop restaurant managers, supervisors, and hourly team members.
• Hold venue leaders accountable for service, staffing, scheduling, cleanliness, productivity, and financial performance.
• Partner with culinary leadership on menu development, product quality, consistency, presentation, and cost control.
• Monitor revenue, labor, food costs, beverage costs, purchasing, inventory, waste, and other operating expenses.
• Prepare and manage departmental budgets, forecasts, financial reports, and performance-improvement plans.
• Analyze sales trends, guest feedback, reservation patterns, and product mix to identify revenue opportunities.
• Develop strategies to increase average checks, capture hotel guests, strengthen repeat business, and maximize venue profitability.
• Oversee beverage programming, inventory controls, purchasing standards, and relationships with vendors.
• Support private dining, group business, hotel events, and special programming.
• Work closely with Hotel Operations, Sales, Marketing, Finance, and Executive Leadership.
• Ensure compliance with New York City Department of Health requirements, liquor regulations, safety standards, and company policies.
• Address escalated guest concerns promptly and professionally.
• Maintain the cleanliness, organization, appearance, and overall readiness of all food and beverage areas.
• Stay informed about New York City dining trends and competitive concepts.

What You Bring to the Table

• At least seven years of progressive food and beverage leadership experience, including experience as a Director of Food & Beverage, Multi-Outlet Director, Restaurant Director, or comparable senior position.
• Proven experience overseeing multiple high-volume restaurant and bar concepts.
• Luxury hotel, upscale restaurant group, rooftop venue, or lifestyle hospitality experience is strongly preferred.
• New York City food and beverage experience is strongly preferred.
• Strong knowledge of restaurant operations, beverage programs, service standards, inventory management, and cost controls.
• Demonstrated success managing budgets, forecasts, labor, food costs, beverage costs, and departmental profitability.
• Experience leading and developing managers and large hourly teams.
• Strong understanding of New York City health, sanitation, liquor, and workplace-safety requirements.
• Excellent communication, leadership, organization, and problem-solving skills.
• A polished, professional presence and a genuine passion for hospitality.
• Ability to work a flexible schedule based on business demands, including nights, weekends, and holidays.
