JOB SUMMARY: Performs specialized large-quantity food preparation work in an assigned food production unit of the Nutrition Center and to learn and use specialized large-quantity food production equipment. SUPERVISION: Receives general supervision from a Nutrition Services Supervisor. Receives limited technical supervision from Senior Food Production Workers assigned to the unit. Exercises no supervision.

ESSENTIAL JOB FUNCTIONS:

• Receive production assignments, including quantities and schedules to ensure timely and accurate processing.
• Assemble specialized large quantity production equipment required to complete work assignments.
• Check ingredients and recipes for accuracy and quality.
• Weigh and measure ingredients.
• Increase and decrease recipes.
• Perform varied hot and cold food production in accordance with established methods and standards.
• Follow departmental standards for safety, sanitation, and quality.
• Follow and ensures compliance with all Hazard Analysis Critical Control Points (HACCP) and food safety procedures.
• Check products during production and upon completion for conformity with standards.
• Verify preparation of requisitioned quantities of product.
• Package finished products for storage and transport using wrapping, sealing, labeling, and other packaging methods.
• Load food onto carts and pushes carts to food storage areas.
• Perform quality control checks of food products and goods prior to delivery, including the verification of expiration/use by dates.
• Assist in consolidating, organizing, and counting food products and other inventory goods.
• Maintain timely communication with co-workers, Senior Food Production Workers, and Management.
• Work in alternating hot and cold areas.
• Assist in testing new products and equipment.
• Advise the assigned Senior Food Production Worker of production problems, equipment malfunction, and the need for supplies.
• Learn and operate mobile conveyors, commercial ovens, slicers, cutters, mixers and steam jacketed kettles, cook tank, food pumps, packaging equipment, chillers, control panels, scales, and other large food production equipment as needed.
• May be required to operate Class III Electric Motor Hand Trucks or Hand/Rider Trucks.
• Maintain assigned production area and equipment in clean and orderly condition.
• Disassemble, clean, and store equipment.
• Provide information for routine production reports.
• Perform related duties as assigned.

Qualifications

EXPERIENCE AND EDUCATION/TRAINING: (These are the minimum experience and education/training standards which will be used to admit or reject applicants for examination.) One year of commercial or institutional large quantity food preparation experience. -AND- High school graduation or the equivalent. LICENSES/CERTIFICATES/REGISTRATIONS (At time of appointment and during employment)

• A valid San Bernardino County Food Handler card, provided by the District within 30 days of appointment.
• Forklift Operator's Certificate (Class III: Electric Motor Hand Trucks or Hand/Rider Trucks) at the District's expense during the first three (3) months of employment and maintained during employment in this classification.

ADDITIONAL SALARY INFORMATION: This is a non-exempt position, Regular Classified Salary Range 30A. Most positions in this class work 8hours/10months. The probationary period for employees in this classification is six (6) months (or 130 working days of paid service).
