Regional Operations Manager

Home Base: Orange County or nearby Los Angeles County preferred Travel: Los Angeles, Orange County, San Diego and periodic Las Vegas travel The opportunity Earlybird Breakfast Burritos is built around a simple idea: make a damn good breakfast burrito and get it out fast. We currently operate two profitable Southern California restaurants in Pacific Beach and Costa Mesa, with eight more Earlybirds planned over the next 18 months throughout Los Angeles, Orange County, San Diego and Las Vegas. We are looking for a proven multi-unit QSR operator who can help us execute that growth. This is not a corporate strategy position, and it is not a construction-management job. You will work directly with our founder, who will continue making high-level decisions and managing site selection and construction alongside our general contractors. Your job is to make sure the work gets done. You will oversee our General Managers, protect the profitability of existing restaurants, help recruit and train new opening teams, build repeatable opening systems and serve as our primary operator on the ground in Southern California. One of your most important assignments will be speed. Earlybird has a focused 12-item menu, lean teams and limited operating hours—but we produce a lot of food in a short morning window. We need someone who understands high-volume kitchen flow and can improve equipment placement, station design, labor deployment and ticket times in both existing and future restaurants. What you’ll own Directly manage and support all Earlybird General Managers. Monitor sales, labor, food cost, ticket times and store-level profitability. Partner with our Director of Finance on budgets and P&L reviews. Evaluate our current kitchens and identify ways to produce food faster. Help improve equipment layouts and operational flow for future restaurants. Build a repeatable opening, hiring and training plan. Recruit and train new General Managers and opening teams. Track permits, inspections, vendors, equipment and other owner-side opening requirements. Visit construction sites and serve as the founder’s eyes and ears on the ground. Lead operational setup, mock service, soft openings and opening-week execution.Develop practical SOPs, checklists and training materials as we grow. Maintain strong supplier and service-vendor relationships. What we’re looking for Proven multi-unit QSR or fast-casual leadership experience. Experience managing at least three to five restaurants. A real understanding of kitchen speed, throughput and peak-period execution. Experience opening new restaurants and training opening teams. Strong P&L, labor, food-cost and inventory knowledge. The ability to coach General Managers and hold people accountable. A disciplined operator who can work effectively with a hands‑on entrepreneur. Someone who is comfortable in the restaurants, not managing entirely from a laptop. The organization and follow-through to keep multiple openings moving at the same time. Location and Schedule Orange County or nearby Los Angeles County is the preferred home base. The position requires regular travel between Los Angeles, Orange County and San Diego, along with periodic travel to Las Vegas. Exceptional candidates elsewhere in Southern California will be considered. Our restaurants are kitchen-forward, have no traditional front-of-house team beyond cashiers and are generally open only 40–44 hours per week. Most work happens during the morning and daytime, but this position will require early mornings, weekend peak-period visits and extended hours during openings. Compensation and Benefits $100,000–$120,000 annual base salary. Target annual performance bonus of 15%, with upside for exceptional performance. Paid time off.
