Pastry Sous Chef

We are seeking an AM Pastry Sous Chef to join our restaurant in Santa Monica. 
In this role, you will have the opportunity to learn and make high level modern interpretations on traditional French pastries. The range of pastries to be made include various tarts, entremets, viennoiseries, ice creams, sorbets and bonbons.

We are a high-end modern French restaurant with a small team focused on creating an
experience and products for our guests that go beyond the norm standards. We aim to create a
fun, dynamic, and innovative atmosphere in our kitchen. 

The candidate should have a good attitude, be reliable, work independently with a strong work ethic, professional training and experience. 

Pastry Cook Duties and Responsibilities

- Bake pastry items according to pre-established recipes
- maintain order guides and prep lists
- maintain storage areas to DOH standards
- Decorate pastries in a consistent style
- Follow portion standards
- Maintain inventory of prepped ingredients
- Properly label and store ingredients
- Keep kitchen area and tools clean and maintained 
- Source specialty products from vendors
