Position Summary

Crew Members are responsible for preparing ingredients, following recipes for consistency, garnishing, taking orders from patrons and delivering their food to them. Their duties include greeting customers, explaining menu items, taking orders, and balancing dishes as they are brought to the table. Crew Members roles should know and be responsible for everything outlined in this description, however the responsibilities may be more heavily weighted in certain areas depending on the station being worked.

Essential Duties and Responsibilities - Server Stations

  • Greets and seats customers, and accurately takes orders
  • Answers questions about the menu and makes recommendations
  • Accurately takes orders and communities them to the kitchen staff
  • Communicates any food allergies or special instructions to the kitchen staff
  • Follows OLCC guidelines for alcohol orders and service
  • Answers the phone and takes orders
  • Ensures that all orders are filled quickly and accurately, and that the food is high quality
  • Provides attentive service to customers, such as refilling drinks as needed and checking on guests' needs during the meal and updating them on the status of their order
  • Promptly addresses any customer service issues and refers them to the appropriate person if necessary
  • Performs cleaning and sanitation duties, such as server station and tables.
  • Taking and processing customer payments using a POS system.
  • Completes side prep work such as cutting cucumbers, refilling condiments, and doing dishes.
  • Packs up to-go orders and ring out customers

Essential Duties and Responsibilities - Cook Stations

  • Operates in the kitchen and/or back of the house, ensuring that food is prepared safely, effectively, and according to specifications and or requests.
  • Parboils food, reduces sauces and starts first steps in various dishes as needed.
  • Ensure ingredients and final products are fresh and complete.
  • Follow recipes, including measuring ingredients, weighing, and mixing ingredients.
  • Bakes, grills, steams, boils, fries, and chops; meat, seafood, fruits, vegetables, and grains
  • Presents and garnishes final dishes so that they are visually attractive.
  • Maintains a clean and safe work environment.
  • Contributes to stocking, ordering, and purchasing of ingredients, ensuring that the necessary ingredients are available and as fresh as possible while also minimizing spoilage/waste by communicating needs to the Head Sushi Chef
  • Communicates any issues with kitchen equipment, utensils, or other operating supplies to the Head Sushi Chef
  • Handles and stores diverse types or ingredients in appropriate ways.
  • Maintains food and safety sanitation standards, policies, and procedures and adheres to all relevant nutrition and sanitary regulations and standards.
  • Complete all tasks on the prep list according to company standards.
  • Labels, dates, and stocks ingredients so they are easily accessible and in the proper area.
  • Washes, chops and sorts, ingredients like fruit and vegetables, making sure they are of the highest quality.
  • Washes dishes, cooking utensils and cookware, takes out the trash and sanitizes the kitchen.
  • Operates the fryer following all safety and sanitation procedures.

Other Duties and Responsibilities

  • Assists the sushi chef as needed
  • Cleans restaurant and dishes as needed
  • Other duties as assigned

Requirements

Qualifications and Skills

  • Excellent customer service skills and the ability to set the tone and atmosphere for not only the customers but other staff members
  • Ability to multitask and work in a faced paced environment at a consistent tempo.
  • Must have a good and cheerful outlook
  • Must have a good understanding of menu
  • Must be dependable and have a good attendance record
  • Ability to work in a team environment and communicate effectively
  • Must be able to follow all health and safety policies and procedures.
  • Must be able to operate a Point of Sale (POS) system, and other electronics in the store such as an iPad.
  • Must have a good understanding of menu and cooking methods, such as using knives, stove, fryer, steamer, and oven.
  • Must have a valid driver's license and the ability to operate a company vehicle if needed.
  • Must be able to function in the primary server, secondary server, server help, Togo, prep/delivery, tempura, primary cook, and secondary cook stations.

Physical Requirements and Job Conditions

  • Ability to stand and walk continually throughout the entire shift
  • Ability to lift, carry, deliver, and serve from trays weighing up to 50 lbs.
  • Ability to balance a serving tray with one hand and distribute food with the other
  • Ability to bend, stoop and reach while carrying items up to 50 lbs.
  • Exposure to extreme heat, steam, and cold present in a kitchen environment
  • Must have manual dexterity to cut and chop foods and perform other related tasks.

  • This position is not eligible for telework, flex schedule or additional holidays.
