Food & Beverage Director

The Director of Food & Beverage is responsible and accountable for the daily operations of all Food and Beverage outlets.

Essential duties and responsibilities include managing concessions, restaurants, and other food and beverage service venues. The role involves hiring, training, and managing a high-performing F&B team, motivating the team to perform 'Winning Experiences' for guests and fellow team members, and enforcing all company policies and procedures as well as standards of quality, safety, and performance.

The Director strategically coordinates with staff to plan menu and pricing, ensures Food and Beverage compliance of gaming and health regulations, develops annual budgets and business plans, and coordinates with marketing to prepare for events and promotions that include Food and Beverage. They maintain a cooperative relationship with all property management and vendors to ensure goals and expectations are achieved, review staffing levels to maintain budgeted levels of employment, delegate authority, and assign responsibilities.

Required skills and abilities include financial skills to prepare and report budgets, public relations and guest service skills, supervisory skills, oral and written communication skills, and the willingness to assume overall responsibility relative to the performance of the property. The ability to analyze planning documents, results, and revise for continued improvement is also necessary.

Education and experience preferred include ten to fifteen years of experience in gaming, hospitality, or related entertainment industry, five years of experience managing managers and/or in a leadership role, and a 4-year degree in a related field or equivalent work experience in excess of 10 years. A valid racing license is also required.

Physical requirements include sitting or standing, walking, using hands to handle objects, tools, or controls, reaching with hands and arms, climbing or balancing, stooping, kneeling, crouching, or crawling, and talking or hearing. The noise level in the work environment is usually moderate to loud, and the team member is subjected to circulate throughout the assigned areas, including the smoking area, actively observing players and functioning of machines.
