Responsible for the management of food services, including the Inmate dining hall and special food services. Ensures dining, service, and food preparation areas and equipment are maintained clean and sanitary and comply with sanitation, safety, and health regulations. Provide staff training; evaluate staff performance and implement organizational and personnel changes as approved by the assistant warden and human resources. Inspects food for quantity, quality, and temperature; assures proper storage and use of inventory; and supervises monitoring and logging of temperatures. Instructs employees and Inmates on safety rules and regulations, proper use of soaps and chemicals including MSDS, sanitary procedures, food preparation and portion control, and the operation of food service equipment. Advises food requirements and recipes; calculates monthly, quarterly, semi‑annual, and annual food requirements; prepares and approves requisitions for food items, supplies, and equipment. Prepares daily menus; ensures adequate controls are maintained over food preparation quantities and portion sizes; prepares menus for special diet requirements of Inmates; and reviews cooks’ worksheets for accuracy. Oversees the department budget, ensuring the department operates efficiently and within budget; prepares budget reports and reconciles the budget monthly. Plans, assigns, and supervises the work of employees and Inmates; reviews employee and Inmate work schedules for adequate coverage; establishes and administers orientation and departmental in‑service training programs. Performs security functions including “pat” and “strip” searches. Maintains regular and predictable attendance. Promotes the development of positive social skills through modeling appropriate behaviors and intervening when inappropriate behaviors are observed; provides regular feedback to staff regarding social skills procedures and intervention techniques. Maintains accountability of staff, Inmates and property; adheres to safety practices. Education and Experience Requirements Graduation from an accredited senior high school or equivalent or GED. Three (3) years full‑time, wage‑earning experience in the supervision of employees or Inmates. Must possess seventy‑two (72) consecutive months of satisfactory active service as a Correctional Officer, supervisor of Correctional Officers, Food Service Manager, or Laundry Manager. Must possess or be able to obtain current valid ServSafe Food Safety certification within twelve (12) months of employment date and maintain it for continued employment. Valid driver’s license with an acceptable driving record required, unless waived by management. Post Hire Requirements Must successfully complete annual in‑service training requirements and pass an annual background check, both approved by TDCJ.
