SOUS CHEF (FULL TIME)

Job Summary Helps the Executive Chef prepare and cook foods, coordinates activities of cooks and other food-service associates, and assumes responsibility for the kitchen and food-service associates in the absence of the Executive Chef. Responsibilities Cook and prepare food following approved recipes and production standards, ensuring all deadlines are met based on production orders. Supervise hourly food service associates, including interviewing, scheduling, payroll, training, counseling, participation in reviews, and recommending disciplinary action as appropriate. Store food in designated areas following all corporate, state and federal food safety and sanitation procedures. Ensure proper food handling, presentation, portion control, and maintenance of appropriate serving temperatures. Maintain sanitation of equipment, supplies, and utensils and clean working areas thoroughly after use. Interact with customers to resolve complaints in a friendly, service-oriented manner and relay relevant information to a supervisor. Demonstrate complete understanding of daily menu items and accurately explain them to associates and customers. Keep up with peak production and service hours. Monitor inventory and deliveries of product and supplies, track production, consumption, and waste, and inform the supervisor when items are low. Perform other duties as assigned. Qualifications • 2+ years of prior sous chef experience. • Knowledge of food safety regulations and sanitation practices. Location 111 Broadway Avenue South, Suite 300 A, Rochester, MN 55904. University of Minnesota. Pay Range $23.50 per hour to $26.50 per hour.
