Sushi Chef

A premier hospitality company in New York City is seeking an experienced Lead Sushi Chef to join its culinary team. This is a hands-on leadership role ideal for a skilled sushi professional who can execute at a high level while helping oversee the day-to-day operation of the sushi program.

The ideal candidate brings strong technical sushi experience, a high standard for quality and presentation, and the ability to lead and develop a team in a fast-paced, high-volume environment.

What You’ll Do

• Prepare and execute high-quality sushi, sashimi, nigiri, rolls, and other Japanese-inspired dishes

• Work hands-on alongside the culinary team during service

• Support the Chef de Cuisine/Executive Chef with the daily operation of the sushi program

• Provide direction, training, and coaching to sushi cooks and other culinary team members

• Maintain consistency in preparation, portioning, presentation, and recipe execution

• Assist with ordering, inventory, product rotation, and minimizing waste

• Monitor seafood quality, freshness, storage, and proper handling

• Ensure compliance with NYC Department of Health requirements and company food safety standards

• Assist with opening and closing procedures, station setup, prep lists, and daily kitchen organization

• Help maintain appropriate staffing and workflow during service

• Communicate product needs, operational concerns, and team performance issues to culinary leadership

• Maintain a clean, organized, and professional work environment

• Lead by example and promote a respectful, collaborative kitchen culture

What We’re Looking For

• 3+ years of professional sushi experience, preferably in an upscale, fine-dining, or high-volume restaurant environment

• Previous lead, supervisory, or management experience preferred

• Strong knife skills and knowledge of sushi preparation techniques

• Extensive knowledge of fish, seafood, proper storage, handling, and sanitation

• Ability to break down and portion whole fish preferred

• Strong understanding of food safety and NYC sanitation standards

• Ability to train and provide direction to culinary team members

• Strong organizational and communication skills

• Ability to remain composed and maintain quality standards during high-volume service

• Flexible availability, including nights, weekends, and holidays
