A Taste of Brooklyn an Italian Eatery and More brings the authentic taste of East Coast pizzerias to Santa Maria! Located in the Town Center Mall Food Court, we pride ourselves on serving fresh, scratch-made pizza dough, signature sauces, and classic East Coast comfort food. We are looking for a reliable, detail-oriented Prep Cook to serve as the foundation of our kitchen operations.

The Role:

Everything great at our pizzeria starts with the dough and sauce. We are hiring a versatile Prep Cook / Dough & Sauce Specialist to handle scratch preparation for our core kitchen ingredients. In this role, you will be responsible for mixing and proofing daily pizza dough batches, crafting signature sauces, and jumping in wherever help is needed to keep the kitchen fully stocked and ready for service.

What You’ll Be Doing:

• Dough Preparation: Scale, mix, knead, portion, and roll daily batches of pizza dough from scratch following exact recipes and proofing schedules.
• Sauce Batching: Prepare signature pizza sauces, marinaras, and specialty dips in large batches with consistent quality and flavor.
• General Kitchen Prep: Slice, chop, grate, and portion toppings, vegetables, meats, and cheeses for the pizza line, grill, and cold stations.
• Kitchen Utility & Support: Fill in on general prep tasks, assist station cooks during pre-rush periods, and help maintain prep inventory levels.
• Sanitation & FIFO: Maintain a clean, sanitized prep station; follow strict food safety guidelines, rotate stock (First-In, First-Out), and properly label/store all prepped items.

What We’re Looking For:

• Prep Experience: Prior kitchen prep experience preferred (experience working with yeast dough, commercial mixers, or batch sauces is a huge plus).
• Recipe Precision: Ability to measure ingredients accurately and follow detailed batch recipes consistently.
• Physical Capability: Ability to lift heavy ingredient bags (e.g., 50 lb flour bags) and operate commercial kitchen equipment safely.
• Flexibility & Team Mindset: Willingness to jump in and tackle different kitchen prep needs as they arise throughout the shift.
