The Production Baker assists the Head Baker with providing customers with quality products by executing creative recipes. The Production Baker is expected to follow all food safety and sanitation standards. The Production Baker will integrate into a strong team of other bakers and prep cooks and will be responsible for meeting expectations set by the Head Baker. This position offers abundant opportunities for learning and development. The Production Baker is required to start at 4:30AM and work at least one weekend day .
Requirements:Job Responsibilities:
- Assist in the execution of bakery and food offerings for all Black Cap locations
- Execute and scale regular production of croissants and other baked goods including but not limited to sweet breads, cookies, muffins, and scones
- Keep a high standard of food safety and sanitation by following weekly and daily cleaning lists
- Assist with critical communications between all Black Cap locations
- Update inventories for in house reference: croissant, dry case, cold case, top of case, cookies, bars, and all baked goods
- Receive and put away deliveries of supplies and verify that correct items and quantities have been delivered
- Support the creation of new menu items based on customers' preferences and feedback
- Produce the weekly menu as directed by the Head Baker
- Create corresponding labels and recorded recipes when appropriate
- Report all equipment and maintenance problems to the Head Baker and Operations Director
- Perform daily and weekly cleaning lists to maintain high cleanliness and sanitation standards
Expectations
- At least one weekend day required, both weekend days preferred
- Start work at 4:30AM
- Work four 10-hour shifts or five 8-hour shifts per week
- Work primarily in one location (Waterbury) but have availability and reliable transportation to work in the other location as needed
- Follow processes and procedures recorded in Employee Handbook
- Take direction from managers and assist where needed
- Maintain regular and reliable attendance
- Report to work in proper uniform, abiding by the dress code:
- Black Cap T-Shirt
- Hair pulled back and covered with a hat, headband, or bandana
- Closed-toed shoes
- Pants (no sweatpants)
- Hands must be free of jewelry and nail polish
- Nails must be kept short and clean
Physical Job Requirements
- Must be able to lift 50 lbs up and down the stairs multiple times per day
- Must be able to lift 50 lbs off the ground from a squatting position
- Must be able to frequently squat, bend at the waist, and twist from the waist while carrying heavy, large objects up to 50 lbs
- Must be able to stand on your feet for up to 8 hours at a time
Required Skills & Experience
- Prior bakery experience preferred
- ServeSafe Food Handler Safety Certification will be provided by Black Cap after hire
- Must have strong skills in: Communication, attention to detail/consistency, sense of urgency, prioritization, professionalism, adaptability
- Must be timely and attentive to work
- Must have a growth mindset and respond constructively to feedback
Black Out Dates
It is important for all employees to be available during peak holiday times. All employees will be expected to work:
- Foliage season (September 20th- October 20th)
- December holiday season (December 26th – January 2nd)
- Presidents’ Day week
- Martin Luther King weekend
- Various summer holidays/events as deemed necessary by management
