POSITION SUMMARY​

The Banquet Chef de Partie is a pivotal leadership role within the high-volume banquet kitchen. This individual is responsible for owning and executing a specific culinary station (Hot, Cold, or Pastry) to deliver flawless, luxury-standard cuisine for events ranging from intimate VIP dinners to large corporate functions. The ideal candidate thrives in a high-pressure, fast-paced environment, possesses elite organizational skills, and knows how to execute precise recipe scaling based on daily Banquet Event Orders (BEOs) with zero compromise on quality.​

CORE RESPONSIBILITIES​

1. BEO Execution & Station Management​

• Read, analyze, and execute daily BEOs to ensure exact portioning, timing, and dietary modifications are met for every function.
• ​Independently manage the daily prep list for your designated station, ensuring all mise en place is completed ahead of service.
• Direct and mentor Banquet Cooks on your station, ensuring they meet exact recipe specifications and plating standards.​
  
  

2. High-Volume Culinary Excellence​

• Execute batch cooking, precise temperature control, and bulk plating while maintaining fine-dining aesthetics and flavor profiles.
• ​Adapt instantly to rapid changes in guest counts, delayed event timelines, or last-minute dietary restrictions without disrupting the flow of service.
• ​Set up and breakdown complex banquet lines, hot boxes, and speed racks efficiently.​
  
  

3. Financial Control & Inventory Management​

• Enforce strict First-In, First-Out (FIFO) inventory rotation to aggressively eliminate food waste and protect department food costs.
• ​Communicate low inventory levels, ingredient shortages, or product quality issues immediately to the Banquet Sous Chef.​
• Maximize ingredient yields through precise butchery, trimming, and batch scaling.​

4. Compliance, Safety & Sanitation​

• Maintain an immaculate, inspection-ready station at all times, exceeding local health department regulations.
• ​Accurately maintain all required temperature logs for walk-ins, hot boxes, and cooling charts.​
• Enforce strict cross-contamination protocols, particularly regarding severe guest allergies.
