A premier hospitality company in New York City is seeking an experienced Sushi Chef to join the culinary team of an upscale, high-volume dining concept. This is a hands-on culinary position focused primarily on the preparation and execution of sushi, sashimi, nigiri, maki, and other Japanese-inspired menu items. We are looking for a skilled sushi professional who is comfortable working a busy station, has strong knife and fish preparation skills, and takes pride in quality, consistency, cleanliness, and presentation.

What You'll Do

• Prepare and execute sushi, sashimi, nigiri, maki, hand rolls, and other sushi-focused menu items
• Slice, portion, and prepare fish and seafood according to established specifications
• Prepare sushi rice and other components needed for daily service
• Maintain proper mise en place and ensure the sushi station is fully stocked and service-ready
• Execute dishes consistently according to recipes, portion standards, and presentation guidelines
• Monitor the quality, freshness, and appearance of fish, seafood, rice, and other ingredients
• Properly label, date, rotate, and store products in accordance with FIFO standards
• Maintain proper handling and storage of raw fish and seafood
• Minimize waste through proper trimming, portioning, preparation, and product utilization
• Keep the sushi station clean, organized, and sanitary throughout prep and service
• Follow all food safety, sanitation, and NYC Department of Health requirements
• Work quickly and accurately during high-volume service while maintaining quality standards
• Communicate effectively with other Sushi Chefs, culinary leadership, and kitchen team members
• Assist with receiving, inventory, prep, and organization of sushi products as needed
• Support additional kitchen preparation and service needs when necessary
• Maintain a professional, respectful, and team-oriented work environment

What We're Looking For

• 2+ years of professional sushi experience, preferably in an upscale, high-volume, or fine-dining restaurant
• Strong knife skills and experience slicing and preparing fish and seafood
• Experience preparing sushi rice, sashimi, nigiri, maki, and other traditional sushi preparations
• Knowledge of proper fish and seafood handling, storage, freshness, and quality standards
• Strong understanding of sushi station setup, mise en place, and service execution
• Excellent attention to detail and presentation
• Ability to work efficiently in a fast-paced, high-volume kitchen
• Ability to consistently follow recipes, portion specifications, and preparation standards
• Strong communication and teamwork skills
• Knowledge of food safety and sanitation practices
• Flexible availability, including nights, weekends, and holidays
• Ability to meet the physical demands of a professional kitchen environment

Compensation: Hourly ($24.00 - $27.00)
