Summary of Position

The Assistant Food & Beverage Manager – Bars is responsible for the daily leadership, operational oversight, financial performance, and guest experience of The Maybourne Bar and The Cigar & Whiskey Bar. This role ensures exceptional service delivery, elevated beverage programs, and Forbes Five-Star standards while supporting the overall objectives of the Food & Beverage Division.

The Assistant F&B Manager – Bars will oversee all aspects of bar operations, including colleague development, inventory management, revenue generation, guest engagement, beverage programming, regulatory compliance, and profitability. This leader will work closely with Culinary, Marketing, Events, Finance, and hotel leadership teams to enhance the bar experience while driving business growth and luxury service excellence.

Roles and Responsibilities

Core functions of the position, but are not limited to the following;

  1. Oversee the daily operation of The Maybourne Bar and The Cigar & Whiskey Bar.
  2. Ensure all guests receive exceptional service that exceeds Forbes Travel Guide and LQA standards.
  3. Maintain high standards of cleanliness, organization, maintenance, and operational readiness throughout all bar venues.
  4. Ensure proper opening, closing, cash handling, and service procedures are consistently followed.
  5. Collaborate with culinary leadership to ensure seamless food and beverage coordination.
  6. Conduct daily floor presence, guest engagement, and quality assurance inspections.
  7. Collaborate with the Head Mixologist and beverage leadership team to maintain innovative cocktail, spirits, wine, and non-alcoholic beverage programs.
  8. Monitor beverage quality, consistency, recipe adherence, and presentation standards.
  9. Ensure compliance with all federal, state, and local alcohol service regulations.
  10. Assist with seasonal menu development, promotions, and special activations.
  11. Support vendor relationships, tastings, brand partnerships, and product sourcing initiatives.
  12. Manage labor, revenue, and expense performance for both bar outlets.
  13. Develop strategies to increase sales, guest capture, average check, and profitability.
  14. Monitor inventory levels, purchasing practices, product rotation, and beverage costs.
  15. Conduct monthly inventories and investigate variances.
  16. Assist with forecasting, budgeting, payroll administration, and financial reporting.
  17. Analyze operational metrics and implement cost-control initiatives while maintaining service standards.
  18. Maintain a visible presence on the floor during service periods.
  19. Develop memorable guest experiences and personalized service encounters.
  20. Handle guest concerns and service recovery opportunities promptly and professionally.
  21. Foster an environment that reflects luxury hospitality standards and exceptional attention to detail.
  22. Support VIP events, activations, partnerships, and special programming initiatives.
  23. Recruit, interview, onboard, train, coach, and develop bar colleagues.
  24. Conduct daily lineups, departmental meetings, and ongoing training sessions.
  25. Create a culture of accountability, teamwork, recognition, and continuous improvement.
  26. Monitor colleague performance and provide coaching, feedback, and development plans.
  27. Ensure compliance with company policies, wage and hour regulations, and departmental standards.
  28. Partner with Human Resources regarding performance management and employee relations matters.
  29. Maintain compliance with health, safety, sanitation, and alcohol service regulations.
  30. Ensure all POS systems, inventory systems, and operational tools are maintained and utilized appropriately.
  31. Support Forbes Five-Star initiatives and departmental quality assurance programs.
  32. Maintain all required certifications and operational documentation.

Qualifications

  • Must possess good attitude, attention to detail, and ability to work under pressure
  • Excellent customer service skills and a Positive attitude are required
  • Must possess the ability to read and write in English proficiently
  • Must have comprehensive knowledge of POS systems, Microsoft Word, Excel, Outlook, etc.
  • Must present a poised and polished appearance as the face of the restaurant
  • Bachelor’s degree or higher in a related field
  • At least 3 years of progressive Food & Beverage management experience, including a minimum of 3 years in a Bar Manager role within a high volume, fast paced, major luxury brand hotel or resort.
  • Full-Service Hotel experience is required, strong knowledge of various brands.
  • Work varied shifts, including weekends and holidays.
  • Food Safety Employee Training required.
  • Training for Intervention Procedures (TIPS) required.
  • Ownership of the Whiskey Bar reservation experience and access controls.
  • Management of Forbes Travel Guide beverage service standards and guest engagement initiatives.
  • Support of luxury brand partnerships, spirit activations, VIP tastings, and hosted events.
  • Collaboration with Marketing, Concierge, and Front Office teams to drive awareness and guest participation in bar experiences.
  • Oversight of specialty programming, seasonal cocktail launches, and revenue-generating promotions.

Physical Requirements

  • The person in this position needs to occasionally move about inside the office to access file cabinets, office machinery, etc.
  • Constantly operates a computer and other office productivity machinery, such a computer, copy machine, printer, etc.
  • Constantly communicates with vendors, clients, staff members, therefore must be able to communicate, converse with and exchange information
  • Must be able to detect, determine, perceive, identify, recognize, and assess from long distances
  • Light to moderate lifting is required

  • Ability stand at a computer terminal for an extended period of time.
  • Must be able to bend, stoop, squat and stretch to fulfil tasks
  • Must be physically able to lift up to 50 lbs. and carry heavy trays and equipment, as well as delicate china and barware
  • Must be physically able to walk without assistance on various surfaces for an extended period.
  • The position requires manual dexterity, grasping, writing, repetitive motion, bending and climbing
  • Position requires walking and standing most of the working day; must be able to stand and exert well-paced mobility for up to 10 hours in length
  • Must be able to bend, stoop, squat and stretch to fulfil tasks
  • Ability to endure abundant physical movements throughout the work areas.
