Ballyhoo Hospitality Group is seeking an energetic, talented, hospitality focused Cake Decorator to join Buck Russell’s Bakery in Wilmette.

Concept Overview: Buck Russell’s is a Ballyhoo Hospitality concept located in downtown Wilmette that brings together a bakery, sandwich shop, and creamery in a warm neighborhood setting. The concept blends the charm of a classic bakery and ice cream parlor with an approachable menu that includes freshly baked pastries, deli style sandwiches, house made desserts, and small batch ice cream. The space was designed to feel welcoming and nostalgic, encouraging guests to stop in throughout the day for coffee and pastries, lunch with friends, or a sweet treat in the evening. Buck Russell’s has become a beloved community gathering place where families, neighbors, and regulars come together for simple food made well.

Position Summary: We are seeking a creative, detail-oriented Pastry Cake Decorator to join our team. This role is responsible for decorating cakes and desserts to company standards while ensuring exceptional quality, consistency, and presentation. The ideal candidate has a passion for pastry arts, strong attention to detail, and thrives in a fast-paced environment.

Key Responsibilities

• Decorate cakes, cupcakes, cookies, and other baked goods according to company recipes, standards, and customer specifications.
• Prepare buttercream, fillings, icings, fondant, and decorative elements.
• Produce custom cakes for birthdays, weddings, holidays, and special events.
• Ensure all products meet quality, freshness, and presentation standards.
• Maintain cleanliness and organization of the pastry and decorating station.
• Follow food safety, sanitation, and health department regulations.
• Assist with baking, finishing, and packaging products as needed.
• Monitor inventory of decorating supplies and notify management when replenishment is needed.
• Work collaboratively with the pastry and bakery team to meet daily production goals.
• Maintain consistency while working efficiently in a high-volume environment.

Qualifications

• Previous cake decorating or pastry experience is required.
• Knowledge of buttercream, fondant, piping techniques, and dessert finishing.
• Strong artistic ability and attention to detail.
• Ability to work independently and as part of a team.
• Excellent time management and organizational skills.
• Ability to stand for extended periods and lift up to 50 pounds.
• Flexible availability, including weekends and holidays.

Preferred Skills

• Experience creating custom celebrations and wedding cakes.
• Knowledge of current cake decorating trends and techniques.
• Culinary or pastry education is a plus.
