Lescombes Family Vineyards is the premier vineyard and winery in the state of New Mexico. Hervé Wine Bar is seeking an experienced, hospitality-driven General Manager to lead our fine dining team in the heart of Santa Fe. We are looking for a polished, high-level restaurant professional with a strong background in fine dining service, wine-focused operations, and full P&L responsibility.

This is an opportunity to lead a sophisticated concept where guest experience, culinary execution, and wine knowledge are central to the brand.

The General Manager is responsible for overseeing all aspects of restaurant operations, including financial performance, staff leadership, service standards, guest satisfaction, and regulatory compliance. The ideal candidate has successfully managed upscale or fine dining restaurants and understands the level of detail required to deliver an elevated experience consistently.

Compensation
$80,000 - $100,000 annually (total compensation potential).
Range includes base salary plus potential monthly performance bonuses based on store profitability and operational performance metrics.

Key Responsibilities
* Oversee daily restaurant operations, ensuring excellence in service and hospitality
* Maintain and elevate fine dining service standards
* Lead, coach, and develop front- and back-of-house leadership teams
* Manage full P&L, labor controls, inventory, and cost management
* Drive revenue growth through strategic planning and community engagement
* Ensure compliance with all New Mexico labor laws, health regulations, and alcohol service requirements
* Oversee wine program execution in collaboration with leadership and supporting roles.
* Foster a positive, accountable, and high-performance culture

Qualifications
* Minimum 5+ years of high-level restaurant management experience
* Fine dining experience required
* Demonstrated success managing full P&L and driving profitability
* Strong leadership, team development, and communication skills
* Extensive knowledge of wine service and upscale hospitality standards
* Experience in luxury or destination markets preferred
* Ability to work evenings, weekends, and holidays as required
