Lead Cook

Lead Cook prepares food and dessert items and directly oversees all food production for service to patients, staff, and visitors. Lead Cook provides supervision and coordination of dietary staff to maintain high standards of quality food production, safety, sanitation, and service in accordance with established policies and procedures and in a manner consistent with the philosophy and objectives of Brooke Glen Behavioral Hospital.

Qualifications:

• High school diploma or equivalency required.
• 3–5 years of direct, relevant experience as a lead cook in a professional food service environment.
• SERV Safe Certification (or equivalent food safety certification)

Job Responsibilities:

• Responsible for timely preparation of meals and oversight of all food production for scheduled meal periods.
• Sweeps and mops floor on a daily basis.
• Complies with established guidelines for sanitation and safety.
• Communicate effectively regarding diet changes, allergies, and meal service special needs
• Practices safety and infection control procedures when performing duties.
• Wears gloves in accordance with department procedures and change gloves after each task.
• Maintain kitchen inventory; help minimize waste and ensure proper food storage
• Assist with short-staffed shifts
• Train new dietary staff and mentor current kitchen staff; provide guidance and support to dietary staff through example
• Communicate with dietary supervisor
• Inspect all deliveries for quality and accuracy
• Performs other duties as assigned/required by this position.
