Food and Beverage Manager

Gilroy Gardens Family Theme Park is seeking a Food & Beverage Manager to lead daily food operations across the park — including Food Stands, Food Carts, Food Warehouse, Catering, and Special Events. This role ensures exceptional service, operational integrity, and financial performance while developing a high‑performing seasonal team. You’ll be hands‑on in the operation, build strong relationships with staff, collaborate cross‑functionally, and help shape the guest experience for thousands of visitors. What You’ll Do Operational Leadership Oversee daily operations of Food Stands, Food Carts, and Food Warehouse. Work alongside frontline teams during busy periods to support smooth operations. Resolve operational issues and maintain efficient workflow. Implement departmental policies, procedures, and financial goals. Lead regular department meetings to strengthen communication and teamwork. Ensure cleanliness and safety standards across all food locations. Conduct routine inspections and maintenance checks on kitchen equipment. Manage execution and logistics for all catered events. Provide daily operational updates to the VP of In‑Park Revenue. Set and monitor annual budgets, sales targets, and profitability goals. Review weekly/monthly reports (guest service, labor, waste, cost of sales, percap, revenue) and act accordingly. Implement cost‑saving strategies including portion control and inventory management. Conduct cost analysis for new menu items to ensure profitability. Maximize revenue through strong cash handling, inventory controls, and POS management. Menu & Product Development Partner with Marketing on special event food concepts and revenue‑driving initiatives. Stay current on industry trends, dietary needs, and allergen considerations. Assist with menu planning, costing, and retailing. Monitor new menu performance and ensure consistency in preparation and presentation. Collaborate with clients to meet special event food requirements. Establish guest service benchmarks and ensure consistent delivery of excellence. Foster collaboration and teamwork across all Food Department staff. Address departmental challenges proactively and promote a problem‑solving culture. Oversee documentation and performance evaluations for seasonal staff and leadership. Conduct regular coaching sessions and recognize outstanding performance. Health & Safety Ensure compliance with all state, county, industry, and park health/safety standards. Maintain high cleanliness standards and proper food safety practices. Enforce handwashing, protective gear usage, and equipment sanitation. Identify improvement opportunities and implement corrective actions. Other Responsibilities Uphold all Gilroy Gardens policies, including safety, attendance, and EEO standards. Participate in Duty Management rotation to support daily park operations. Perform additional duties as assigned. Supervisory Scope Manage 90–120 seasonal staff, 25 seasonal management members, and 5 part‑time management staff (varies by season). Oversee subordinate managers, including staffing decisions, performance reviews, coaching, scheduling, standards enforcement, and disciplinary actions. Qualifications & Skills Bachelor’s Degree in Industrial Hospitality, Restaurant/Hotel Management, or equivalent experience. 3–5 years of multi‑unit food management experience. Strong knowledge of food operations, health/safety, procurement, inventory, budgeting, and accounting. Must be 21+ with a valid Driver’s License. Strong people management, communication, and presentation skills. Proficiency in Microsoft Office. Ability to exercise independent judgment in emergency situations, scheduling, planning, and problem‑solving. Ability to work nights, weekends, and holidays. Must pass required drug tests and background checks (per applicable laws). Strong math skills (rate, ratio, percent, bar graph interpretation). Ability to read, write, and speak English at a level required for meetings, staff direction, and business documentation. Required Certifications ServSafe Manager Certification (required or within first 30 days). ServSafe Allergen Training (required or within first 30 days).
