DIETARY SUPERVISOR-PRN (AS NEEDED)

Summary To Supervise Dietary Staff from opening of the Department until closing, ensuring the department operates efficiently and safely. Responsibilities Quality Assurance/Regulatory Compliance: participate in record keeping and staff training to ensure compliance with State and JCAHO standards. Maintain proper records in the kitchen for refrigerator and freezer temperatures. Maintain proper records for dish machine temperatures and pot sink sanitizer concentration. Conduct periodic kitchen sanitation audits as directed by the Department Head and develop action plans from those audits. Conduct pre‑service checklists at the beginning of the tray line. Staff Development/Leadership: train, coach, develop, and discipline staff as needed to achieve departmental goals of job performance and customer service. Coach Dietary Staff on proper job procedures to maintain compliance. Conduct disciplinary discussions with staff for oral and written warnings. Respond to staff sensitively, with a caring tone. Train basic job functions for Production, Tray line, and Sanitation staff. PRN Role (as needed) This is a per‑shift position with duties identical to those described above.
