Sanitation Technician

The Sanitation Technician is a key member of the Commissary team, responsible for maintaining a clean, safe, and food‑compliant production environment. This role ensures all equipment, processing lines, and facility areas meet Tacombi sanitation and food safety standards through daily cleaning, chemical handling, and adherence to Good Manufacturing Practices (GMPs). The Sanitation Technician reports to the QA Manager and supports cross‑functional teams in delivering safe, high‑quality products.

Your responsibilities include:

Sanitation Execution

• Perform daily cleaning and sanitation of all processing lines, equipment, and food contact surfaces.
• Clean and sanitize utensils, machinery, floors, walls, and ceilings according to established protocols.
• Disassemble and reassemble equipment as needed to ensure thorough cleaning and prevent contamination.
• Safely handle, mix, and store sanitation chemicals following label instructions and safety standards.

Food Safety & Compliance

• Follow all GMPs, HACCP principles, and regulatory requirements (FDA, OSHA).
• Use proper personal protective equipment (PPE) and adhere to chemical safety guidelines.
• Prevent cross‑contamination through correct cleaning procedures and sequencing.
• Execute lockout/tagout procedures when cleaning or servicing equipment.

Monitoring & Documentation

• Complete sanitation logs, performance reports, and daily shift documentation accurately and on time.
• Conduct routine sanitation audits and verify cleaning effectiveness.
• Monitor and manage sanitation supply inventory.

Operational Support

• Partner closely with Quality Control and Production teams to ensure seamless operations.
• Communicate clearly with supervisors and team members regarding sanitation status and needs.
• Support additional sanitation or facility-related tasks as assigned.

You should have:

• High school diploma or equivalent
• 1–2 years of sanitation experience in food production or manufacturing preferred.
• Working knowledge of food safety practices, sanitation procedures, and cleaning chemicals.
• Understanding of foodborne pathogens, contamination risks, and prevention methods.
• Ability to read and interpret chemical labels, SOPs, and safety documentation.
• Basic computer skills for logging and recordkeeping.

A strong candidate is:

• Able to prioritize work effectively and maintain a strong attention to detail
• Bilingual (English/Spanish) required.
• Self‑motivated with the ability to work independently and as part of a team.

Physical expectations of the position include:

• Ability to stand, walk, and perform repetitive tasks for extended periods.
• Ability to lift and carry up to 50 lbs, with or without reasonable accommodation.
• Ability to bend, reach, climb, and work in confined or elevated spaces.
• Comfort working in wet, humid, hot, or cold environments.
• Ability to safely handle cleaning chemicals and wear required PPE at all times.
