Position Summary

The Prep Cook plays a critical role in supporting the kitchen team by preparing ingredients, maintaining organization, and ensuring the kitchen runs efficiently. This position is ideal for individuals who are detail-oriented, disciplined, and eager to grow within a fine-dining environment. Prep Cooks at Suzu will work with high-quality, seasonal, and Japanese specialty ingredients.

Key Responsibilities

Food Preparation & Production

• Execute daily prep tasks including cleaning, cutting, portioning, and marinating ingredients
• Follow detailed recipes and preparation standards
• Assist with preparing stocks, sauces, garnishes, and base components
• Maintain accurate labeling, dating, and storage of all prepped items

Kitchen Support & Organization

• Ensure all stations have sufficient mise en place before service
• Maintain a clean, organized, and efficient prep area
• Assist line cooks, Chef de Partie, and Sous Chef with various tasks as needed
• Support team with restocking and rotating inventory

Quality & Consistency

• Handle premium ingredients with care and precision
• Ensure consistency in cuts, measurements, textures, and prep quality
• Report any product issues, shortages, or quality concerns to kitchen leadership

Food Safety & Cleanliness

• Follow all HACCP guidelines, sanitation standards, and food safety best practices
• Maintain clean cutting boards, prep tools, and equipment
• Support daily and weekly cleaning tasks to uphold fine-dining kitchen standards

Qualifications

• 0–2 years of kitchen experience
• Strong knife skills and a willingness to learn advanced techniques
• Food Handler Certificate
• Ability to follow instructions, recipes, and prep lists accurately
• Excellent time-management skills and a sense of urgency
• Respect for cleanliness, organization, and professional kitchen discipline
• Interest in Japanese cuisine, techniques, and ingredients (training provided)
