Cook - Dietary Aide HCC

Job Purpose The Dietary Aide assists with food preparation in accordance with established procedural guidelines and as directed by the Food Service/Dietary Manager/Supervisor. The Cook prepares nutritionally sound meals in departmental and regulatory compliance, ensuring foods are served at proper temperature and time. The role supports efficient resource allocation to meet residents’ nutritional needs. Key Responsibilities Assist cook in meal preparation, salads, desserts, snacks, and other dishes. Follow diet orders and NPO orders. Serve nourishment in accordance with procedural guidelines. Properly store leftovers and opened food. Follow procedures for serving partner meals. Offer menu substitutions and record them per guidelines. Comply with infection control policies in the work area. Deliver trays to patients/residents in halls and dining area. Assist with serving/pouring of beverages and making coffee/tea as requested. Clean dining tables after each meal. Clean work area at shift end, including sweeping, mopping, and storing cleaning equipment. Clean kitchen equipment such as carts, counters, ice machines, blenders, mixers, slicers, freezers, refrigerators, stoves, steamers, garbage disposals, dish machines, coffee/tea makers, and steam tables. Remove garbage from kitchen areas and empty garbage containers. Scrape and wash dishes, pots, and pans, and store properly. Record freezer and walk-in refrigerator temperatures per established procedures. Maintain dishwasher and dish sink; record water temperatures; check sanitizer strips; monitor chemical levels. Maintain supply stock and store items per procedures. Set up tray line and perform tray line service. Operate dish machine, garbage disposal, mixer, blender, slicer, steamer, and coffee/tea makers. Use, clean, and maintain serving equipment (ladles, spoons, scoops, etc.) per procedures. Apply food handling, preparation, and storage techniques complying with state and federal regulations. Follow recipes and prepare nutritionally adequate meals served at proper times. Supervise kitchen staff assisting with preparation, assembly, cleaning, and storage. Prepare and maintain supply of food substitutes for resident preferences and cultural needs. Inspect trays post-service to monitor resident acceptance; report findings to Dietary Manager. Follow manufacturer’s instructions for equipment use and maintenance. Handle, store, and dispose of food supplies in compliance with department procedures and regulations. Knowledge, Skills, Abilities Participate in center/agency surveys (Licensure / JCAHO) and produce required reports. Attend continuing education programs to stay current with field changes and maintain required licenses/certifications. Attend mandatory in‑services. Honor patients’ rights to fair and equitable treatment, privacy, and civil rights. Comply with corporate compliance program. Report job‑related hazards, including blood and body fluid exposures. Follow safety regulations, including fire protection, smoking regulations, and infection control. Follow safety procedures when operating equipment. Perform related duties as directed by supervisor. Demonstrate respect for the dignity and individuality of each resident. Demonstrate honesty and integrity in all interactions. Follow standardized recipes. Know emergency and disaster procedures, locate nearest exit, and respond to instructions. Adhere to workplace safety policies, including universal precautions and PPE use. Follow infection control procedures and use PPE when indicated. Inspect food service areas for pests, safety, or fire hazards, and housekeeping issues. Report problems promptly to Dietary Manager; communicate with the Manager throughout shift. Assist Department Head with state inspection preparation and attend survey training. Interact with state surveyors as instructed and report injuries immediately. Minimum Education Required Sufficient education to demonstrate functional literacy. Minimum Experience Required A minimum of one (1) year institutional food service experience as a cook. Additional Qualifications Experience in Long Term Care Food Production is preferred.
