Dietary Director

Dietary Director Bloomington, IL, US Overview Villas of Holly Brook and Reflections Memory Care is a leading operator of assisted living and memory care communities in 25 locations in Illinois, Indiana, and Florida. Responsibilities Responsible for the day-to-day operations and staffing for the kitchen and dining venues of the community. Manage and supervise all Dietary Services staff including scheduling, assignment, direction, performance review (including input on pay adjustments), hiring and corrective action consistent with company policy. Meet regularly with residents and family members to confirm high satisfaction levels. Ensure front of house and back of house staff work closely together to deliver a food product that exceeds residents’ and guests’ expectations. Assist kitchen staff with back and front of house operations as needed; able to work all stations in the kitchen and/or dining room if required. Collaborate with the Executive Director and staff to achieve and maintain department Customer Satisfaction and Quality Enhancement levels at or above designated scores. Delegate tasks to all staff to maintain the highest levels of cleanliness and quality in the kitchen and dining areas. Ensure all food is prepared, stored, and served in accordance with company standards and state/local health code requirements. Interview and hire staff for the Dietary Services department. Understand and maintain monthly and annual budgets for the Dietary Services department, including documentation of monthly spend on food, supplies, and labor. Plan and develop recipes and menus with staff and residents based on resident preferences and monthly budgets. Ensure staff use and maintain equipment properly to avoid damage and costly repairs. Maintain appropriate inventory of kitchen supplies, small wares, and tableware. Maintain purchasing standards and vendor relationships; ensure vendors are used appropriately. May perform other duties as assigned or requested.
