We’re looking for an experienced line cook who takes real pride in consistency: someone whose fortieth ticket of the rush looks exactly like the first. About Us Lobster Lab is Tiger Hospitality Group’s coastal seafood concept — lobster rolls, lobster grilled cheese, chowders, and seafood salads, rated the #1 lobster roll in San Diego on Yelp. After starting at the Windmill Food Hall in Carlsbad, we just opened our newest location on the Sky Deck at Del Mar Highlands Town Center, and we’re building the kitchen team that will keep the quality that earned that reputation. Our menu is short and focused — which means every single item has to be right, every single time. About the Role A year from now, success looks like this: you run your station cleanly through a slammed Saturday, every roll, sandwich, and bowl of chowder goes out to spec, your station passes any inspection at any moment, and newer cooks learn the standards by watching you work. What You’ll Do Run your station — griddle, fryer, soups, or assembly — through service, keeping pace with tickets without sacrificing quality Cook and build every item exactly to spec; consistency is the job Handle seafood properly: temperatures, storage, rotation, and strict cross-contamination control Set up and break down your station — prep levels, backups, and clean-as-you-go through the whole shift Communicate on the line: call backs, count downs, and flag low stock or 86s early Keep the kitchen at health-inspection-ready standards at all times Pitch in on prep and dish when the team needs it What We’re Looking For Required: At least 1 year of line cooking experience (fast-casual or full service) Comfortable on griddle and fryer stations, with solid knife skills Speed with consistency — you stay organized and keep quality up when tickets stack A team-first attitude: clean, respectful, and reliable shift after shift California Food Handler Card, or willingness to get one within 30 days of hire Able to stand for a full shift, work around heat, and lift ~50 lbs Availability that includes evenings, weekends, and some holidays Nice to have: Experience cooking or handling seafood High-volume kitchen experience ServSafe certification A second language Pay & Perks Competitive hourly pay [plus tip pool share, if your policy includes BOH — common in California] Full-time and part-time schedules available, with flexible scheduling Shift meals and employee dining discounts Real growth opportunity — Tiger Hospitality Group is expanding across Southern California, with new Lobster Lab locations on the way Tiger Hospitality Group is an equal opportunity employer.
