Mattos Hospitality is seeking a Dining Room Manager for a new venture opening in New York City in early 2027. Joining during the pre-opening stage, the Dining Room Manager will work closely with the restaurant leadership team to prepare for opening, train the front-of-house team, and establish the service standards and daily practices that will shape the dining experience.

The venture will include multiple food and beverage experiences and requires a manager who is deeply engaged in service and the development of the team. We are looking for a thoughtful and hands-on hospitality professional with strong floor presence, sound judgment, and a genuine commitment to creating a warm, attentive, and consistent experience.

The Role

• Lead daily dining room service, maintaining a strong presence on the floor and ensuring consistent execution of service and hospitality standards
• Participate in the pre-opening process, including recruitment, training, service preparation, systems implementation, and opening readiness
• Lead pre-service meetings and ensure the team is prepared with relevant menu, beverage, event, and operational information
• Train, coach, and develop the FOH team, reinforcing service standards, product knowledge, communication, and professionalism
• Support the General Manager and Assistant General Manager in the day-to-day management of the restaurant
• Oversee opening and closing procedures and ensure the dining room is consistently prepared, organized, and maintained
• Monitor the guest experience throughout service, anticipate needs, and address feedback or concerns with care and sound judgment
• Partner closely with culinary leadership to maintain clear communication between the kitchen and dining room and support a cohesive experience
• Work collaboratively with the beverage team to ensure strong product knowledge and thoughtful execution of the beverage program
• Support daily floor plans, sections, breaks, and staffing adjustments based on the needs of service
• Reinforce company policies, operating procedures, and expectations through consistent communication and follow-through
• Support private dining, events, and special services, ensuring the team is prepared and execution is consistent with established standards
• Assist with training materials, service tools, and ongoing education for the FOH team
• Maintain awareness of labor, overtime, and other operational considerations during service
• Identify opportunities to strengthen service, improve communication, and support the continued development of the team
• Address employee performance and workplace matters promptly and professionally in partnership with restaurant leadership and Human Resources
• Ensure compliance with applicable health, safety, sanitation, and workplace requirements
• Foster a culture centered on hospitality, professionalism, collaboration, accountability, and respect

Experience & Leadership

• Previous experience as a Dining Room Manager, Restaurant Manager, or in a comparable FOH leadership role within a high-quality, full-service restaurant
• Experience supporting a restaurant opening or building a service team from its early stages strongly preferred
• Strong understanding of service, hospitality, and dining room operations
• Demonstrated ability to train, coach, and develop front-of-house teams
• Strong floor presence with the ability to lead service calmly, confidently, and consistently
• A thoughtful approach to hospitality with the ability to anticipate guest needs and respond effectively to a range of situations
• Strong working knowledge of food, wine, and beverage service
• Highly organized with strong attention to detail and consistent follow-through
• Sound judgment and the ability to make effective decisions in a fast-paced service environment
• Clear and respectful communicator who works well across FOH, culinary, beverage, and leadership teams
• Hands-on, collaborative, and comfortable working alongside the team

Physical Demands

The physical demands for this position include seeing, hearing, speaking, reaching, frequently lifting up to 25 pounds, occasionally lifting up to 50 pounds, standing for extended periods, bending, and moving intermittently throughout working hours.
