We're looking for an experienced, detail-oriented Sushi Chef who is passionate about quality food, exceptional presentation, and memorable guest experiences.

You're someone who takes pride in your craft, works with precision, and maintains high standards even during the busiest service periods. You thrive in a fast-paced, high-volume restaurant environment and can balance speed, quality, consistency, food safety, and guest service.

You're comfortable preparing sushi in an open, guest-facing setting and collaborating with both front-of-house and back-of-house teams. You enjoy sharing your knowledge with guests and helping newer team members build their skills.

What You'll Do

• Prepare sushi rolls, nigiri, sashimi, and specialty dishes according to company recipes and presentation standards.
• Use knives and other kitchen equipment safely and skillfully to portion and prepare ingredients.
• Maintain consistency in flavor, quality, portioning, freshness, and presentation.
• Inspect ingredients before use and promptly report quality or food-safety concerns.
• Properly store, label, date, and rotate ingredients following FIFO procedures.
• Maintain a clean, organized, and fully stocked sushi station throughout each shift.
• Follow all sanitation, food-handling, allergen-awareness, and workplace-safety requirements.
• Provide welcoming and knowledgeable service to guests seated at or interacting with the sushi bar.
• Answer guest questions about menu items and communicate allergy or dietary requests appropriately.
• Collaborate with kitchen and front-of-house teams to maintain smooth service and accurate order execution.
• Monitor inventory, restock supplies, and assist with prep work and opening or closing responsibilities.
• Minimize food waste by following recipes, portion standards, and proper storage procedures.
• Support the training and development of new sushi team members as assigned.

Compensation: $18.50 per hour + tips.

What You Bring

• One to three years of professional sushi-preparation experience preferred. 
• Experience preparing sushi rolls, nigiri, sashimi, and specialty dishes preferred. 
• Strong knife skills and knowledge of sushi-preparation techniques. 
• Understanding of food-safety, sanitation, allergen-awareness, and proper food-storage practices. 
• Ability to prepare dishes accurately and consistently in a fast-paced, high-volume environment. 
• Strong attention to detail, organization, and presentation. 
• Clear verbal communication and guest-service skills. 
• Ability to manage multiple orders and priorities during busy service periods. 
• Ability to work independently while contributing to a collaborative team environment. 
• Positive attitude, dependability, and willingness to support team needs. 
• Washington State Food Worker Card required before beginning work. 
• Availability to work evenings, weekends, holidays, and variable shifts based on business needs. 

The Physical Stuff

• Restaurant-based work environment, including a busy kitchen and guest-facing sushi bar. 
• Ability to stand and walk for extended periods. 
• Ability to regularly bend, reach, twist, and use hands and arms for repetitive chopping, rolling, cutting, and plating. 
• Ability to occasionally lift, carry, push, or pull up to 30 pounds. 
• Frequent in-person communication with guests, team members, and restaurant leaders. 
• Ability to safely use knives, food-preparation equipment, and other kitchen tools. 
• Ability to work around food allergens, sharp tools, moderate noise, and varying temperatures. 
• Ability to work efficiently in a fast-paced environment. 
• Ability to work evenings, weekends, holidays, and variable shifts as required. 
• Ability to perform the essential functions of the position, with or without reasonable accommodation.
