Restaurant & Bar Manager Sinatra Bar & Lounge | The Southern Turf Club Nashville, Tennessee Position Summary The Bar Manager is responsible for the leadership, organization, execution, and financial performance of the beverage programs at Sinatra Bar & Lounge and Southern Turf Club. This is a hands-on operational management position. The Bar Manager is expected to be present on the floor, lead the bar team during service, maintain exceptional beverage and hospitality standards, develop bartenders and barbacks, control inventory and costs, and ensure both venues are consistently prepared for successful service. The Bar Manager reports to the General Manager and works closely with the management team, culinary leadership, vendors, and the Events team. Primary Responsibilities Bar Operations Oversee daily bar operations for Sinatra and Southern Turf Club. Ensure bars are properly stocked, organized, clean, and prepared before every service. Maintain opening, closing, cleaning, stocking, and side-work standards. Conduct regular walkthroughs of all bar areas before, during, and after service. Maintain proper pars for liquor, wine, beer, mixers, garnishes, glassware, and bar supplies. Identify equipment, maintenance, and supply needs before they affect service. Maintain exceptional sanitation, food-safety, and EcoSure standards throughout all beverage areas. Serve as Manager on Duty when scheduled and assist with overall restaurant operations beyond the bar when necessary. Team Leadership Directly lead the Bartender and Barback departments. Participate in hiring, onboarding, training, coaching, and development of beverage employees. Establish clear expectations and hold the team accountable to Sinatra and Southern Turf Club standards. Conduct beverage education and ongoing training on cocktails, spirits, wine, beer, steps of service, responsible alcohol service, and product knowledge. Develop strong bartenders capable of working successfully in both Sinatra and Southern Turf Club. Provide regular coaching and performance feedback. Address performance, attendance, uniform, professionalism, and conduct issues promptly. Build a culture of teamwork, hospitality, accountability, and pride within the department. Scheduling & Labor Prepare and maintain bartender and barback schedules based on projected business levels, events, reservations, and operational needs. Manage beverage labor responsibly while maintaining appropriate service levels. Monitor overtime and make proactive scheduling adjustments when necessary. Maintain appropriate staffing levels and develop adequate bench strength to cover vacations, call-outs, events, and increased business. Beverage Program Maintain the integrity and consistency of all cocktail recipes and beverage specifications. Ensure proper recipe execution, pours, presentation, glassware, garnishes, and pricing. Work with leadership on seasonal cocktails, menu changes, beverage promotions, and special events. Maintain strong knowledge of the wine, spirits, beer, and cocktail programs at both venues. Conduct regular bartender recipe and product-knowledge testing. Maintain updated beverage training materials and recipe guides. Support Southern Turf Club member programming, cocktail classes, tastings, and beverage-related events. Inventory & Cost Control Take ownership of beverage inventory and inventory accuracy. Maintain appropriate product pars based on usage and business levels. Assist with or oversee weekly beverage ordering. Receive and verify beverage deliveries and ensure products are properly stored. Monitor high-cost, allocated, and limited-availability products closely. Investigate inventory variances and unusual product usage. Monitor liquor, wine, and beer costs and identify opportunities to improve profitability. Control over-pouring, waste, breakage, comps, spills, and unauthorized consumption. Ensure all transfers, waste, comps, and product movement are properly documented. Work with vendors and distributors to address out-of-stocks, allocations, substitutions, and product availability. Guest & Member Experience Maintain a visible leadership presence during service. Develop relationships with Sinatra regulars and Southern Turf Club members. Assist bartenders during high-volume periods rather than managing solely from the sidelines. Resolve guest concerns professionally and immediately. Maintain the elevated hospitality standards expected of Sinatra and Southern Turf Club. Recognize VIPs, members, regular guests, and special occasions and ensure their experience is appropriately personalized. Events & Southern Turf Club Coordinate beverage needs for private events, member events, buyouts, cocktail classes, and special programming. Review upcoming events and communicate product, staffing, setup, and operational needs in advance. Ensure event bars are properly stocked and prepared before guest arrival. Work collaboratively with Events, Culinary, and Operations leadership to execute events successfully. Management Expectations The Bar Manager is a member of the restaurant management team and is expected to contribute to the success of the entire operation—not only the bar. The position requires: Full-time management availability. Approximately 40–45 hours per week based on business needs. A minimum of five shifts per week unless otherwise approved. Regular evening, weekend, and holiday availability. A minimum of two closing management shifts per week. Participation in manager meetings and pre-shift meetings. Availability for major events, holidays, high-volume periods, and VIP functions. Ability to function as Manager on Duty for Sinatra and/or Southern Turf Club. Willingness to assist other departments when operationally necessary. Strong knowledge of spirits, classic and contemporary cocktails, wine, and beer. Experience managing inventory, beverage costs, ordering, and product pars. Demonstrated ability to train and develop bartenders. Strong leadership, communication, organization, and problem-solving skills. Comfortable working in a highly visible, guest-facing management role. Ability to remain composed and decisive during high-volume service. Strong understanding of responsible alcohol service and food-safety practices. Experience with POS, scheduling, inventory, and restaurant management systems preferred. Leadership Standard The Bar Manager should set the standard for the beverage team through presence, preparation, knowledge, accountability, and hospitality. This position is not intended to simply maintain the bar program.
