Grill Cook
Position Summary
Responsible for cooking all grilled proteins central to Cholapink's menu — anticuchos, and other Peruvian-style grilled items — to spec, consistently and quickly, in a fast-paced counter-service environment.
Key Responsibilities
- Season and grill chicken, beef, and other proteins according to Cholapink recipes and marinade standards (aji panca, aji amarillo-based marinades, etc.)
- Monitor grill temperatures and cook times to ensure food safety and consistent doneness across high volume
- Maintain proper rotation of marinating proteins (FIFO) and communicate par levels to management
- Keep grill station stocked, clean, and organized throughout shift per health code
- Coordinate timing with line cook/expo to ensure orders are plated within QSR speed standards
- Perform opening/closing grill maintenance (cleaning grates, breaking down equipment, sanitizing surfaces)
- Follow all food safety and sanitation protocols (proper temps, glove use, cross-contamination prevention)
Requirements
- Prior grill or high-volume cooking experience preferred
- Ability to work in a fast-paced, high-heat environment during peak rushes
- Familiarity with Peruvian flavors/ingredients a plus, not required (training provided)
- Food handler's certification (or willingness to obtain)
- Ability to stand for full shift and lift up to 50 lbs
