Garde Manger Cook – Job DescriptionJob Purpose

The Garde Manger Cook is responsible for the preparation, production, assembly, and presentation of high-quality cold food items. This position specializes in cold-kitchen production, including composed salads, sandwiches, wraps, canapés, charcuterie and cheese presentations, cold appetizers, fruit and vegetable displays, cold sauces, dressings, garnishes, desserts, and other cold food preparations required for catering orders.

The Garde Manger Cook must demonstrate creativity, precision, adaptability, and strong attention to detail while following established O’Neill’s menus, recipes, preparation methods, plating specifications, portion standards, and customer requests. Because many cold food items are presented directly to clients without additional cooking, exceptional care must be taken regarding freshness, appearance, portioning, temperature control, allergen management, packaging, and labeling.

The Garde Manger Cook is an on-site team player, collaborator, communicator, and production resource for all culinary and production team members. The position may occasionally be required to shop for or produce specialty items that are not included in O’Neill’s standard specification books.

The Garde Manger Cook must take immediate action on orders received and produce high-quality menu items as instructed by the Executive Chef, General Manager, Kitchen Manager, and culinary supervisors. The position must follow all company procedures relating to culinary quality, food safety, customer satisfaction, order accuracy, and cost control.

Although this position primarily focuses on the garde manger and cold-production areas, the Garde Manger Cook may be required to assist with hot-food production, desserts, sauces, specialty items, displays, and other kitchen responsibilities according to operational needs.

The Garde Manger Cook supports O’Neill’s culinary initiatives, learns all standard food displays, and practices culinary artistry through the safe use of fresh ingredients and the application of quality, craftsmanship, and finesse in culinary design and presentation.

The Garde Manger Cook works in partnership with all culinary and production staff to provide practical solutions in situations requiring immediate action, adaptability, and critical thinking. The ultimate objective is to provide every client with the highest standards of quality, accuracy, freshness, presentation, and craftsmanship.

The Garde Manger Cook reports to the culinary supervisory team.

• Conduct themselves professionally at all times while working in the O’Neill’s kitchen, at a client location, or while interacting with customers, vendors, drivers, administrative personnel, and other team members.
• Prepare and assemble cold food items, including composed salads, garden salads, sandwiches, wraps, canapés, hors d’oeuvres, charcuterie, cheese platters, cold appetizers, fruit displays, vegetable displays, cold sauces, dressings, garnishes, desserts, and other specialty cold preparations.
• Follow established recipes, photographs, plating guides, portion standards, customer specifications, and written production instructions.
• Ensure every cold food item meets O’Neill’s standards for freshness, flavor, color, texture, portioning, balance, cleanliness, and visual presentation.
• Use appropriate knife skills, slicing techniques, portioning methods, garnishing techniques, and presentation standards when preparing cold food items.
• Prioritize catering orders in coordination with the culinary team and ensure that each order is completed accurately and on time.
• Review production sheets, order tickets, customer requests, allergy information, packaging instructions, and delivery deadlines before beginning production.
• Verify that all prepared food matches the kitchen-issued specifications and the requirements of the individual customer order.
• Inspect ingredients before use and select the freshest and highest-quality products available for cold food production.
• Maintain strict time and temperature controls throughout the preparation, assembly, holding, packaging, and storage of cold food items.
• Minimize the amount of time potentially hazardous food remains outside temperature-controlled storage and immediately return ingredients and completed products to appropriate refrigeration.
• Prevent cross-contamination by properly separating raw ingredients, ready-to-eat foods, utensils, cutting boards, equipment, and work surfaces.
• Follow all handwashing, glove-use, utensil-use, sanitation, and ready-to-eat food-handling requirements.
• Read, understand, and follow all allergen instructions. Prevent allergen cross-contact and immediately report any uncertainty or discrepancy to a culinary supervisor.
• Ensure that food, packaging, labels, dates, quantities, portion sizes, allergens, garnishes, and tray contents are accurate before an order is finalized.
• Package cold food items in the appropriate containers to protect product quality and presentation during storage and transportation.
• Apply all required labels accurately, including product identification, production dates, use-by dates, customer information, allergen information, and any other required order details.
• Conduct a final quality inspection of each item before it leaves the garde manger area.
• Learn and consistently reproduce O’Neill’s standard food displays, plating styles, garnishes, composed dishes, trays, platters, and presentation techniques.
• Use culinary creativity when producing custom or specialty items while remaining within customer requirements, cost expectations, and food-safety standards.
• Assist in the training and direction of new and existing team members, particularly in cold-food preparation, portioning, presentation, labeling, sanitation, and food-safety procedures.
• Provide feedback and recommendations to the culinary supervisory team to help maintain and continuously improve food quality, presentation, workflow, efficiency, and consistency.
• Assist with general food preparation and the daily operation of the kitchen according to business and production needs.
• Support other culinary stations, including hot food, desserts, sauces, and specialty production, when directed by the Executive Chef, Kitchen Manager, General Manager, or culinary supervisors.
• Maintain a clean, safe, orderly, and sanitized garde manger station throughout the shift.
• Prepare and maintain properly concentrated quaternary-ammonium sanitizer stations and replace sanitizer solutions as required.
• Assist with completing and monitoring temperature logs, refrigeration checks, sanitation records, production records, and other required food-safety documentation.
• Properly clean, sanitize, store, and maintain knives, cutting boards, slicers, food processors, refrigeration equipment, worktables, and other equipment used in cold food preparation.
• Follow preventive-maintenance practices for kitchen equipment and promptly report damaged, malfunctioning, or unsafe equipment to a supervisor.
• Properly rotate ingredients and prepared products using first-in, first-out procedures and established date-marking requirements.
• Monitor inventory levels for cold-kitchen ingredients, garnishes, packaging materials, labels, and other supplies.
• Assist with ordering, receiving, inventory counts, product rotation, and storage organization when required.
• Reduce unnecessary waste by following recipes, portion controls, yield expectations, and approved production quantities.
• Immediately report food-quality concerns, temperature deviations, damaged products, labeling errors, allergen concerns, missing ingredients, or order discrepancies to a culinary supervisor.
• Assist with sanitation, cleaning, driving, shopping, order delivery, client-site production, and other operational responsibilities when assigned.
• Perform any additional duties assigned by the Executive Chef, Kitchen Manager, General Manager, or culinary supervisory team.

Performance will be evaluated through the Annual Performance Review process, conducted prior to the beginning of the new fiscal year and at the six-month point of the fiscal year.

The review will include the employee’s specific job responsibilities and O’Neill’s Exceptional Service Goals, with particular consideration given to:

• Accuracy and timely completion of customer orders.
• Quality, freshness, consistency, and presentation of cold food.
• Compliance with recipes, specifications, portion standards, and customer requests.
• Food-safety, sanitation, HACCP, allergen-control, labeling, and temperature-control compliance.
• Organization and cleanliness of the garde manger station.
• Product yields, inventory control, and waste reduction.
