Job Summary

The Sous Chef will support the TikTok Café commissary program, with food production originating from Commissary kitchen/CPU. Since TikTok does not have a full production kitchen on-site, the role will focus on commissary food oversight, food safety execution, service presentation, and front-of-house operational support within the prep and assembly areas.

The Sous Chef will play a key role in ensuring food quality, temperature control, organization, cleanliness, and a positive guest experience during daily lunch and dinner service.

The Sous Chef will play a key role in our monthly pop-up events for approximately 450 employees. Responsibilities include some food production, supporting the Café Manager with set-up and presentation, and creating a fun, high-quality experience for our guests. These events have become a favorite among employees, generating great participation, positive feedback, and excitement while showcasing our team's creativity.

The Sous Chef will report directly to the General Manager. While this position will not have direct reports, the Sous Chef will be supported by front-of-house personnel within the scope of core responsibilities outlined below.

Responsibilities and Requirements

Commissary Food Oversight

· Oversee daily commissary food flows from ByteDance/CPU kitchens to TikTok Café

· Coordinate food receiving, staging, setup, replenishment, and presentation during service

· Ensure food quality, consistency, and presentation standards are maintained throughout service

· Communicate operational or food quality concerns to management and commissary partners as needed

Service Support

· Assist with transporting CPU hot boxes to designated service areas

· Verify hot boxes remain secure and closed during transport to maintain safe food temperatures

· Organize and stage hot boxes in designated holding areas to support efficient service flow

· Take and record temperatures of all hot and cold food items upon receipt in accordance with food safety procedures

· Ensure all temperature logs and food safety documentation are completed accurately and on time

· Set up appropriately labeled and color-coded serving utensils and smallwares for each dish to help prevent cross-contamination

· Transfer hot food from transport pans into Bon Chef serving vessels and place into service hot boxes as space permits

· Maintain cleanliness and organization throughout setup and service while following all sanitation and food safety standards

Service Station Management

· Set up stations a minimum of 15-20 minutes prior to service

· Ensure all required serving utensils, smallwares, labels, and signage are clean, sanitized, and properly positioned

· Replenish food from hot boxes throughout service while maintaining proper temperature control and food quality

· Monitor food appearance, freshness, and portion consistency during service

· Maintain stations in a clean, organized, and guest-ready condition at all times

· Promptly address spills, debris, and sanitation concerns throughout service

Food Safety and Sanitation

· Maintain hot holding temperatures at 135°F or above and cold holding temperatures at 41°F or below

· Monitor for and prevent cross-contamination by:

o Using designated utensils for each item

o Replacing utensils regularly or when contaminated

o Ensuring proper food separation and labeling

· Follow all Bon Appétit, local health department, and food safety standards

· Support compliance with:

o Time & Temperature controls

o Allergen awareness

o Sanitation and cleaning standards

Guest Experience Support

· Support front-of-house staff during service periods as needed

· Help ensure stations remain stocked, visually appealing, and operationally smooth

· Assist in creating a welcoming and positive guest experience

· Respond professionally to guest questions or concerns regarding menu items or food presentation

Operational Expectations

· Maintain strong communication with management, café staff, and commissary partners

· Support efficient execution of both lunch and dinner service

· Demonstrate urgency, organization, cleanliness, and attention to detail

· Lead by example in food safety, professionalism, and teamwork
