The Grand Bohemian Charlotte, Autograph Collection is an AAA Four Diamond boutique hotel located in Uptown Charlotte. Its central location provides access to nearby landmarks including Truist Field, Romare Bearden Park, and the NASCAR Hall of Fame. The property is also within walking distance of the Charlotte Convention Center and the city's business district.

Guest rooms are designed with Argentinian-inspired elements and include modern amenities. Dining options feature Mico Restaurant and our rooftop bar, Búho Bar, with views of the Uptown skyline. Additional facilities include an art gallery and spaces for socializing or relaxation. The hotel has flexible event venues that can accommodate meetings, weddings, and social functions.

The overall objective and purpose of the Director of Restaurants & Bars position is to coordinate, supervise and direct all property food and beverage operations while maintaining a profitable F&B department and high quality products and service levels. The Director of Restaurants & Bars is expected to market creative ideas to promote business; reduce turnover; maintain revenue and payroll budgets and meet budgeted productivity while keeping quality consistent with 4-Diamond standards.

Responsibilities include:

• Monitor and control payroll and other expenses
• Create and adhere to F&B budgets
• Create schedule utilizing forecasting and scheduling tools to provide maximum efficiency and labor savings
• Directs food and beverage services organizational strategies by contributing information, analysis, and recommendations to functional strategic thinking and direction.
• Analyzes trends, prepares critical measurements, develops the F&B business plan; addresses customers, profits, associates and markets with the hotel management team; implements production, productivity, quality and guest-service strategies, designs systems solves problems; implements change
• Implements food and beverage financial strategies by anticipating requirements, trends and variances; develops budgets and capital expenditure plans; develops action plans, measures and analyzes results, initiates corrective actions, minimizing the impact of variances
• Approves menus by consulting with executive chef, beverage manager, room service manager and banquet managers; reviews potential F&B menus; evaluates popularity of past menu options and availability of seasonal food ingredients and wines; anticipates food and beverage consumption and estimates cost of ingredients; minimizing waste; approving orders with suppliers; monitors the evaluation of the quality of product
• Controls F&B supplies by meeting with sales representatives; negotiating prices and contracts; developing preferred supplier lists; reviewing and evaluating usage reports; analyzing variances; taking corrective actions.
• Keeps F&B equipment operating by enforcing adherence to operating instructions
• Maintains safe, secure, legal and healthy work environment by establishing, following and enforcing sanitation and quality of food and beverage preparation and service standards and procedures; monitors conformance to the regulations of the alcoholic beverage commission; enforcing sanitation and legal regulations of all kitchens, bars and service areas.
• Identifies current and future customer service requirements by establishing rapport with potential and actual customers and other persons in a position to understand guest service requirements.

Qualifications include:

• Bachelor's degree in Business or related training equivalent - required
• 3+ years of relevant work experience in similar scope and title – required
• Experience within luxury brand/markets – required
• Strategic business leader - Works strategically to devise plans in alignment with organizational goals.
• Cultivates engagement - Builds loyalty to the company and not to themselves. Proven ability to host/facilitate effective meetings, motivate teams to produce results with tight timeframes while simultaneously managing several projects.

For Employees Based in Washington:

• 8 paid holidays per year
• Up to 20 days of paid vacation per year, based on classification and length of service
• Paid Sick & Safe Time accrues at 1 hour for every 30 hours worked, with up to 72 hours of unused time carried over from one anniversary year to the next.

For Employees Based in Colorado:

• 8 paid holidays per year; employees working in the City of Denver receive 64 hours of designated holiday time per calendar year
• Up to 20 days of paid vacation per year, based on classification and length of service
• 6 days or 48 hours of Paid Sick Leave per year, accrued at 1 hour for every 30 hours worked.

For Employees Based in California:

• 8 paid holidays per year
• Up to 20 days of paid vacation per year, based on classification and length of service, capped at 1.5x annual accrual rate; non-supervisory employees working in the City of Los Angeles accrue up to 22 days of Compensated Time Off, based on length of service capped at 192 hours of combined PST and CTO.
• Paid Sick Time accrues at 1 hour for every 30 hours worked, unused time is carried over from one anniversary year to the next up to a maximum of 80 hours; employees working in the City of Los Angeles are provided 40 hours of Paid Sick Time annually on their anniversary, unused time is not carried over from one anniversary year to the next.

For such associates, eligibility for and the terms and conditions of benefits are governed by the applicable CBA and any applicable plan documents, and may differ from the benefits described above. In the event of any conflict or inconsistency, the terms of the applicable CBA and governing plan documents will control, as applicable.
