SHO Asian Table is seeking an experienced Sushi Chef to join our culinary team in Red Bank, New Jersey. This position requires participating in all SHO kitchen prep and sushi chef on the line during service.

This is not an entry-level sushi position. Candidates must have professional experience preparing a full range of sushi, including nigiri, sashimi, maki, hand rolls and specialty rolls, and must be comfortable working with a variety of raw and cooked seafood.

The ideal candidate has strong knife skills, excellent knowledge of fish handling and preparation, and the ability to consistently execute an established sushi menu in a high-volume restaurant environment.

Responsibilities

• Prepare nigiri, sashimi, maki, hand rolls, specialty rolls and other sushi menu items according to SHO recipes, portions and presentation standards
• Prepare and portion a variety of fish and seafood for sushi service
• Demonstrate proper sushi knife techniques and professional fish-handling skills
• Maintain consistency in portioning, flavor, presentation and quality throughout service
• Properly receive, inspect, store, label, date and rotate fish, seafood and other ingredients
• Maintain appropriate station prep and pars for service
• Monitor freshness and product quality and communicate concerns immediately
• Minimize waste through proper preparation, portion control and product handling
• Maintain a clean, organized and sanitary sushi station at all times
• Follow all food-safety, sanitation, temperature-control and cross-contamination procedures
• Work efficiently and accurately during high-volume service
• Communicate and work collaboratively with the culinary and management teams
• Follow SHO Asian Table recipes, systems and established culinary standards

Qualifications

• Professional sushi chef experience required
• Must be experienced in preparing all major types of sushi, including nigiri, sashimi, maki, hand rolls and specialty rolls
• Strong sushi knife skills required
• Experience handling and preparing raw fish and seafood required
• Strong understanding of food safety and sanitation practices
• Ability to maintain speed, accuracy and presentation standards during busy service
• Ability to follow established recipes, specifications and portion standards consistently
• Strong attention to detail, organization and cleanliness
• Dependable and able to work effectively as part of a culinary team
• Must be available to work a flexible restaurant schedule, including evenings, weekends and holidays as business needs require

This position is focused on skilled execution of SHO Asian Table's established sushi menu. Menu development or creation of new sushi rolls is not a primary responsibility of this position.
