Sous Chef

Job Overview Position: Kitchen Supervisor at TPC Sawgrass, located in Ponte Vedra Beach, Florida. Responsible for leading kitchen operations in multiple dining outlets, banquet and meeting spaces, and supporting PGA TOUR Players and guests. Responsibilities Assist Chef management team with creating menu items for a la carte and banquet menus. Create daily specials reflecting operating concept and creative use of food. Design theme decorations for banquets and buffets, including ice displays. Prepare and produce menu items according to standard recipes and PGA TOUR quality standards. Recruit, hire, train, schedule and conduct performance reviews of kitchen staff. Train and supervise cooks, ware washers, and other kitchen staff on recipes, plating specifications, sanitation, and safety standards. Operate large mixers, meat slicers, and other equipment. Maintain purchasing procedures to ensure proper product quantities and levels. Handle special requests, concerns and complaints professionally. Resolve problems quickly and objectively. Use ChefTec to manage food inventory and production. Assist in internal controls for the Food & Beverage Department and conduct monthly inventories. Assist in the development and maintenance of marketing and promotional programs for the department. Act as kitchen supervisor during all meal periods, including banquets, in absence of Executive Chef. Participate in pre‑meal meetings to maintain communication with Front of House staff. Assist in achieving Food & Beverage sales, expenses, and profit goals. Operate within all established guidelines, policies, and constraints set by PGA TOUR Golf Course Properties, Inc. Perform special projects or other duties as assigned. Qualifications High school diploma or equivalent education. Culinary degree or equivalent training. At least three years of culinary experience in progressively responsible positions. Thorough knowledge of culinary concepts, practices, and procedures, food preparation, and kitchen maintenance operations. Prior supervisory experience preferred. Physical Demands and Working Environment Regularly required to stand, walk, sit, kneel, use hands to handle items, talk or hear, lift up to 25 pounds. Requires good vision, depth perception, color vision, ability to adjust focus. Must comply with all applicable safety and health regulations. Travel Travel is not expected for this position. Work Schedule Expectations This position requires shifts as necessary based on business levels. Supervisory Responsibility This position manages employees and is responsible for performance management and hiring within the department.
