The Banquet Captain is responsible for leading and coordinating on-site food and beverage service for off-premises catering events. This position ensures that all events are executed professionally, efficiently, and according to The Flame Catering’s service standards. The captain supervises assigned staff, coordinates with the kitchen and event contacts, oversees event setup and breakdown, and ensures guests receive exceptional service.

Essential Duties and Responsibilities:

Event Preparation and Setup

• Review event orders, menus, timelines, and service requirements before each event.
• Coordinate with the catering team to ensure food, equipment, supplies, and serving items are ready for transport and service.
• Lead the setup of buffet stations, plated dining areas, beverage stations, and other event service areas.
• Ensure tables, linens, place settings, and service equipment are arranged according to the event specifications.

Staff Leadership and Supervision

• Direct, assign, and supervise servers, bartenders, and other assigned event staff.
• Conduct staff briefings to review assignments, timelines, menu details, and guest service expectations.
• Ensure staff arrive on time, are properly dressed, and maintain professional conduct.
• Monitor staff performance and provide direction throughout the event.

Food and Beverage Service

• Coordinate service timing with the kitchen team and event contact.
• Oversee buffet service, plated meals, hors d'oeuvres, beverage service, and clearing of tables.
• Ensure food is presented properly and service areas remain clean, organized, and stocked.
• Communicate dietary restrictions, special meal requests, and service concerns to the appropriate team members.
• Resolve routine service issues promptly and notify management of significant concerns.

Client and Guest Relations

• Serve as the primary on-site service contact for the event, as assigned.
• Communicate professionally with clients, venue representatives, vendors, and guests.
• Maintain a courteous, welcoming atmosphere and represent The Flame Catering positively.
• Ensure the event follows the approved schedule and promptly communicate any necessary adjustments.

Breakdown and Closeout

• Supervise the breakdown and cleanup of service areas at the conclusion of the event.
• Ensure catering equipment, serving pieces, linens, and supplies are collected, accounted for, and packed properly.
• Confirm that the event space is left clean and in accordance with venue requirements.

Qualifications

• A valid driver's license and a satisfactory driving record if driving company vehicles is required.
• Previous banquet, catering, restaurant, hospitality, or event-service experience required; supervisory experience preferred.
• Strong leadership, communication, organization, and problem-solving skills.
• Ability to manage a team and remain professional in a fast-paced environment.
• Reliable transportation and the ability to travel to event locations throughout Eastern NC.
• Flexible availability, including evenings, weekends, holidays, and early mornings as needed.
• Ability to stand and walk for extended periods and lift, carry, and move catering supplies and equipment, with or without reasonable accommodation.
