Join us, and let's craft great things together, one delicious slice at a time.Your mission:Under general supervision and according to established policies and procedures, monitors all of the production procedures and parameters to ensure that established quality, safety and legal standards of food products are maintained.What you'll do:Checks and documents specific data corresponding to assigned product line (crust, topping, USDA, cookie, assembly)Examines dough temperature for accuracy and ensures that it is recorded by the dough mixer.Checks and documents that the metal detector is correct and recorded by the packer.Inspects and documents the trailer condition as well as the raw material and product conditions during the receiving and loading process. Ensures that the appropriate form is properly completed.Monitors the end of the production line to ensure finished product weight and proper identification is printed on product shippers.Conducts product evaluations in the laboratory. These include: baking test and specification parameter evaluations, as well as texture analysis. Records findings on evaluation form.Calibrates thermometer, scales and pH meter daily.Perform microbiology testing for Cookie dough by being able to plate samples and read results for various plates, (Ecoli, Coliform, Yeast and Mold).Keeps lab and test bake areas cleanComplete required AIB food safety and quality modules on annual basis or within one year from start datePerform other duties as required by managerWhat you'll bring:High School Diploma or GED.College course work in Food Science or related area (American Institute of Baking) is preferredOne year of experience in a food service or manufacturing environment.Good oral and written communication skills.Ability to comprehend basic mathematical concepts such as fractions, ratios, temperature tolerances, multiplication and additionAverage computer skills: Microsoft Word, Outlook and Excel.Ability to maintain information in a confidential manner.Knowledge of Good Manufacturing Practices (GMP's) strongly preferredPrevious experience in food manufacturing and/or laboratory environment preferredWhere you'll work:Welcome to the heart of pizza innovation!
