Sous Chef

Overview Sous Chef – Edwardsville, IL. Full-time position with compensation ranging from $42,000.00 – $55,000.00 per year, based on experience and knowledge. Responsibilities Scheduling and coordination of kitchen staff Staffing for maximum productivity and high standards of quality Control labor costs to achieve maximum profitability Establish controls to minimize food waste, supply waste and theft Train employees on safety, sanitation and accident prevention Support safe work habits and a safe working environment at all times Consult with GM/AGM regarding menus and offerings for special events Cooks or directly supervise items that require skilled preparation Evaluate products on quality and price Provide communication to Director of Store Operations on policies and procedures Establish and maintain a regular cleaning and maintenance schedule for the kitchen and equipment Ensure kitchen managers achieve goals and follow responsibilities Interview, select, train, supervise, counsel and discipline all kitchen staff Ensure positive attitudes, professionalism, and adherence to uniform, grooming and appearance standards Interact positively with restaurant staff and guests to promote teamwork Produce a high volume of work that is accurate, complete and of high quality Be punctual and available for phone calls as needed Ability to work varying schedules including mornings, days, evenings, holidays and extended hours Ability to type, use e-mail and other technologies as assigned Ability to write and cost out recipes Problem-solve practical issues with limited standardization Proficient in food planning and preparation, purchasing, sanitation, security, policies and procedures, personnel management, recordkeeping, recipe development, and report preparation Perform other duties as directed Goals Food Quality – maintain the highest level of food quality Sanitation – keep kitchen clean at all times and pass inspections Labor Cost – manage kitchen labor to meet goals and optimize labor dollars Food Cost – ensure proper devices and measurements are used; manage staff to achieve food cost goals Training – ensure all kitchen staff are fully trained at their stations Evaluate food products to ensure consistent quality Provide professional development for kitchen staff Menu development – stay current with trends and submit items for menu changes Compensation And Benefits Salary based on experience and knowledge Monthly bonuses with attainable goals Yearly bonus up to 10% of salary Vacation – accrued starting immediately Health insurance – Bella Milano covers 50% of the cost Total compensation including bonus ranges $45,000 to $55,000 based on experience Physical Requirements Ability to speak and hear Vision requirements: close, distance, color, peripheral and depth perception; ability to adjust focus Constant standing with some walking; ability to stand for long periods (up to 8 hours) Ability to reach, bend, stoop and lift up to 35 pounds; occasionally lift/move 50 pounds Manual dexterity and fine motor skills Communication Monthly Store Manager meetings E-mail Phone Google Calendar Licenses, Certificates, Insurance Food Sanitation License Driver's License Auto Insurance COVID-19 Considerations Bella Milano follows CDC guidelines, including daily health and temperature screenings of all employees.
